Wondering if you cld use a hammer drill or sorts and follow along the lines of gaps somewhat where the concrete is without disturbing the layers on top the stones themselves too much? Then you Cld do the lime mortar in between where possible to give you back the breathability I think you’re after. Just a thought with way no real idea if it would work 😊

Don't forget, you are going to want a thick layer of insulation on top of the ceiling panels, behind the knee wall.
Sistering the joists is a good idea! Don't forget, you are going to want a thick layer of insulation on top of the ceiling panels, behind the knee wall. So stop your subfloor where the knee wall begins. Set the bottom plate of the knee wall on the rafters, then you can slide mineral wool or fiberglass insulation beneath the bottom plate and subfloor. Result - No thermal break to leak heat.

Well done Lewis! As others have suggested, an impact driver would make it all go easier. Another note is that it is generally considered best practice to use two screws (or nails) vertically offset to sister in a joist in order to prevent potential lateral tipping. Not likely, but it is best practice. That would also possibly involve shims when sistering to cockeyed older joists. Can't argue with your technique - laser level, consistent reference point and measurement. Well done!

Are you treating for woodworm in the old joists?
Does notching the sister joist reduce its strength? Should joist hangers be used to keep full height of the sister joist?
I think all the weight transfer between joists and walls is still being taken on the old joists. All the new joist is there for is to level the floor, so weight is being transfered from new joist to old via screws then from old joists to walls if that makes sense?
You need an impact driver son. Life changer.
Two drills is pretty much similarly 'life enhancing'.....!
Maybe a simple jig for the joistheight might help? Just a 20cm+spacer high block of wood, you can put on top of the joists while finding the correct position? Thanks for the video!
I hope you can soon treat yourself to a driver so you don't have to keep swapping out the drill and driver bits from a single drill. It's definitely something I wish I had done sooner!

Looks like you & your wife have no problem with the stairs to the attic. I am of a larger size, so would have had to move the stairs, so that they came out in the middle of the house. It's a very big job for a DIYer, so I can understand why you haven't done it. Well done on some good restoration work. Two thumbs up.

I wanted to give you the name of the youtube couple in Portugal who have been battling humidity--Make Do Grow. Their most recent posting was called Solving Our Damp Dilemma. It sounds like maybe you have your mold problem under control, but this couple is still having problems.
You’ve shown us that the floor is horribly out of level but not why it is ,otherwise a great episode in persistence and getting the job done.
Hi, I have restored a couple of older houses. The floors go out of level due to the house 'settling'. Different parts of the house settle more than others.
Spray the whole outside with a waterresistant breathable coating like siloxane, skill builder have a video about it, it stops rain from getting in to the walls
Get an ERV not HRV, and a minisplit AC to heat, you can also use it to dehumidify also or just use a dehumidifier
Mixing vinegar and baking soda is only a waste of time and money. The disinfecting properties is mostly in the acidity of vinegar and by mixing it you get neutral salt water with zero benefits... Yes internet is flooded with "cleaning hack" with this and it is only a hack and a scam
About the ventilation through the chimney... Depending on the weather and the amount of water you push through there you can easily get condensation within the chimney, and that means a brown-ish goo seeping through the stonework. Google up 'chimney stain'. You can get it for old chimneys and even without fire, just by the condensed water. If that happens then you may need to think about chimney insulation.

I love watching the reno, it's something I'm in to now. Seeing the products and methods available for DIY'ers in France is a great learning adventure. But I have to say again, your video story telling / video editing / audio post skills are really good. You have talked a little about Marion's day job, I'm curious what your background is. Have you ever been a Documentary Producer? If not, maybe you should consider it. Great job.

Yep, definitely wood worm. Replace the weak and treat the rest. And don't keep the removed planks inside the house. Unless you want do it (the replace-and-treat) again in a couple years!
Unless rain is coming down or imminent, open your skylights. The more air you have circulating the better. Make certain the up facing side of the second floor ceiling is fully dry as well as the joists. Several box fans would be useful. Use one to suck this attics air out and blow it into the barn. Looks like you have a lot of nails to deal with. Give Marion a break and consider cutting the nails flush with an abrasive disk. Get yourself a couple of nice planks or plywood (much lighter than OSB) walkways. You will be using them a lot. Will be much easier on your knees and you'll avoid much of the risk of stepping through the ceiling. :) TO level the floor, you will have to use dimension lumber sized so that you can cut one single wedge that will run from the center beam to a point just beyond where your knee wall will stand. No point in going all the way into the eve. Cut your wedge board material to length get your dimensions at beginning and end, snap a chalk line and rip it with a circular saw. Tack it in place and move on to the next one. :)
