I wish you’d take a chance by opening a couple of outlets in Kolkata. As a person who’s absolutely in love with these brownies from her time in Delhi and Mumbai, I terribly miss them!
I see hygiene, but still I believe Indians need to stop handling food bare hands and start using gloves instead. That ways it gives more assurance to people.
As long as people wash hands before mixing, there is nothing wrong with using bare hands, top Italian chefs use bare hands to mix pizza dough, then what is wrong with using bare hands to spread the brownie batter? In fact a dosa batter doesn't ferment well unless you use bare hands. Also who knows what grade of plastic is being used in the gloves, also adding to plastic waste.
