The way the antenna wobbles makes it kind of unique compared to non-toy theremins.

Watching you just have fun and claim you don't know what you're doing is rather encouraging entering into my second year of making music. You've helped me take things far less seriously while venturing outside of my comfort zone. You rock, Magpie.

The ONE thing that I would add to that toy besides an audio output jack would be a simple "Normally Closed" button and a bypass on/off switch on the output line. This way, you could be having it make a pitch, suddenly cut the sound, move your hand, let go of the button, and you would have another pitch. You could do individual notes that way instead of having it slide up and down. The switch would allow you to bypass the button and revert it back to normal. If you spam-push that button really fast, you can cause the thing to go like an arpeggiator or create a vibrato. I have a crazy circuit bent radio that works like a theremin that I use this setup in. It's easy to put in (You can do it right when you're putting the audio jack in!), and it really expands the expressiveness of the thing.

That looks like the Gakken Mini Theremin DIY kit from their Science Project For Adults series. They also made a neat DIY kit for an electric ukulele which is a lot of fun!
Also add a buffer or something to the output! That should stop the weird differences in pitch.

Do you think it's possible to circuit bend a toy, like a keyboard to actually have a theremin integrated into it, even somehow where striking keys affects the sound of the theremin.
