Frozen dumplings are very common in many Asian households. Often times, when we're making dumplings or wontons, since the process can be tedious, we'll make more than necessary and freeze the extras for quick cooking later on. I'm Vietnamese, so my family also often has frozen spring rolls that we pull out for easy frying every once in a while too. Also, if you don't want to make dumplings, a lot of local dumpling places or Asian markets will have their own homemade ones frozen and ready for purchase. You can buy them and store them for later too. Just be sure to call and check or look around for a place that does so. :)

Ben's mentioned it several times and it's reminded me of an idea for one of those Chef Skills Challenge badges: minimizing food wastage. It's something I've actually wanted to see on a cooking show, but none I've seen have ever done it. Have all the fresh ingredients be past their prime (as much as possible anyway... something like old chicken or fish, just no), like wilty lettuce or cabbage, tomatoes that have gone a bit wrinkly, etc.
Instead of just tossing it out like so many would do, turn it into a decent meal.

Ironically, I discovered TODAY that a dumpling place that I've been wanting to try for AGES (but, y'know, plague times) sells their in-house made dumplings frozen, and I'm planning to grab a bag as soon as I've cleared some freezer space!
(I live alone and have a pretty small freezer, but I'll always keep chopped frozen herbs, a few homemade "ready meals", spinach, chopped celery and a bag of some kind of chicken pieces kicking around in there.
The herbs are great for when you're cooking for one and can't keep things alive to save your life; homemade portions of food for evenings when I get home from the lab or work late; spinach the lads have talked about today; celery I love in soups but hate in everything else, but I will not throw away food, so it's kept in the freezer until soup is on the menu again; and a bag of chicken legs allows you to buy a better-treated chicken for less, since the legs are a less popular part than the breasts AND it's perfect for everything from soups to a one-person-roast!)

Hi there! Cook here with more experience working in a kitchen professionally than not! I wanted to weigh in a little on my frozen choices, in the case that anyone cares.
My main go-to in the frozen section is baguette dough. Usually they come already shaped and ready to be thrown straight into the oven, but you can also get bread dough or something like that and shape it much like the pizza dough in this video. This is a great hack to just have something quick and easy to add on to a dish. Quick garlic bread. Quick cook sandwich. A vehicle for flavor. It won't always be as good as fresh baguettes, but they are great to have as an "Oh, what should I do to make this pasta less basic?" or so on.
This next one is more for my fellow Norwegians as they would know what I am talking about more. In Norway we have a leftover dish just called 'pytt i panne', which is at its general core, potatoes, onions and sausage/ham, in a frying pan. In most freezer sections you can get a variety of things needed to make that, such as big kilo bags that contain all three, or what I like to buy, a bag of frozen potatoes that are already boiled, and chopped in paysanne (small cubes). This is a tremendous hack for potetball or blandaball. You can roast them, or fry them to add texture to a plate, small and individually frozen so you can very easily figure out portion sizes. Absolutely love these things.
Another thing I love that might not be as available in the UK, is reinskav, which is basically reindeer meat cut into pieces of various sizes. Easy to get and quite affordable reindeer meat, amazing in pitas and in stews, and very hard to get in other forms. A great thing to stock up on.

On microwave defrosting: there's really two types of microwaves- "standard" and inverter type. Basically the latter can actually adjust the power output of the magnetron to actually provide less heating power. Some say on them they're inverter type but the other way to know is as Ben described: if you hear it clicking on and off then it's usually the classic type and not a inverter. (This same cycling or not holds true for when setting a reduced power setting.)

When it comes to pizza dough, I always make double what I need and then freeze the extra. So you have great homemade pizza dough when ever you want it. Also batch cooking currys, chilli, soup cookie dough and other bits. I always make more than I need and portion it up and keep it in the freezer. As you then have an amazing meal already for you in a couple of minutes.

With fresh spinach I've also found that unless you use all of a packet at once (I dont know about other countries but round here it's generally only available in fairly large factory-packed baggies, like salad mix), you're unlikely to get to use the leftovers before it goes off. Spinach, especially if at all bruised, goes off quicker than a raw prawn on a windowsill.

He glossed over that massive carbon footprint pretty smoothly. Is the Sorted audience really that thick?

Just tip with the frozen spinach making everything watery: defrost in microwave in some water then drain before adding to your dish, it also separates it so you don’t cook it unevenly as it takes awhile for the centre to defrost in the pan

I often make my own (extremely good... I don't care, they are) naans. If I make too many I always freeze the leftovers and they're ok when thawed, but not as good as fresh. You've inspired me to make a ton of dough and freeze *that* in portions, then I can just cook them fresh as and when and they won't take all day!

Freezer rundown: cooked meatballs, breaded chicken strips, french bread rolls, home-cooked ground meats, home-cooked mashed squash, sliced banana, homemade pancakes, home-prepped shredded coconut, french fries, hash browns, farmer's market pork cuts, raw chicken and turkey, meat alternatives, frozen fruit, frozen veggies, individual servings of leftover meals. I have also had leftover sauces, broth cubes, pureed chipotle pepper cubes, pre-cut onions and peppers (either store or home prepared). A larger freezer has been on my wish list for awhile!
