.egg 2
.sugar 1/2 cup (90g)
.lemon juice or vinegar 1/2 tsp
.all purpose flour 3/4 cup (100g)
.cardamom essence or cardamom powder 1/2 tsp
.baking powder 1/2 tsp
.milk 2 tbsp (30ml)
.oil 2 tbsp (30ml)
.rasmalai 10-12
.whipping cream 1 and 1/2 cup (380 ml ) not 180 ml
.sugar 1/4 cup

Can you please clarify my doubt.
I beat the eggs without separating the yolk. Would it be the reason for the hardness in the cake? Though my sponge was very airy and soft, the final outcome after adding the rasmalai was hard.

Hi Manjaris! Thank you for all your recipes! I tried so many and they always come out delicious. Almost all of your recipes are in 6"pan. Can you teach cake in bigger pan like 8" because i have bigger family? Or can i just double all the ingredients?
Ohhh... Wow 👏 👏 👏 👏 up till now u saw all RUclips videos for rasmalai cake.. Allmost all bakers made it with eggless sponge. But you are the one who made with egg sponge cake...is this cake smells bit eggy with Rasmalaies?... How it tastes... I thought its my myth that all indian fusion cakes much have to be decorated woth eggless sponge only... But you cleared my doubts.. Thanks aton once again dear🙏😊... No, there won't be any egg smell dear but their will be slight cardamom smell because we have added cardamom essence 😊. My friends loved it. It came out really soft and moist.

Hello. I know from 6 inch round pan to 8 inches you need to double recipe and to 9 inches you need to triple recipe for round pans. I don't know how much you will need for rectangular moulds, but I hope this may give you an idea.

This is my worry . In this case you will have to double the recipe and make it twice.. I dunno why no reply but I’m not sure how the height comes but should be with the baking soda...

Hi Manjari! I am making this cake today but my egg whites din turn into soft peaks even after beating it with an electric beater for almost 10mins. I got so frustrated that I added d eggs yolks to it n beat it again. The mix never turned into peaks. I just hope it turns out well. Also d batter was just about 1/4th of d 6” inch tin. Can u reply please what could have gone wrong
I tried some days mine was a hit ..I beat for more than 20 mins though
Make sure the egg whites don't come into contact even with a bit of fat (means the yolk part, any oil etc). So your bowl has to be very clean. If your egg yolk breaks while separating, start again as well (or better break each egg separately before adding to bowl of whites). If there is even little bit of fat, egg whites will not beat up into peaks
