    It's time to head into the kitchen, but before beginning to cook, we need a crash course in the tubers that abound in the cooking of Puerto Rico and the Caribbean. There's true yam that comes in multiple varieties. And then the fun starts. One man's yucca is another's cassava. And another's yautia might also be called tannia, cocoyam, taro, dasheen, or malanga! Chef Alfredo Ayala walks us through the many varieties of tubers and tells us how each is used.

    Taro is malanga.
    Eddo is yautía.
    Yams is ñame.
    Sweet potato is batata.
    Yellow sweet potatoe is batata mameya

      @@HijaDeCristo18 Yams are Dioscorea, Sweet Potatoes are Morning Glory. Potatoes are Nightshade. Oca is Woodsorrel. Mashua is Nasturtium.

    What is arrowroot in spanish and apio in english called? I wanted to know because chef Ayala mentions these two of the five root vegetables needed to make the "masa" or batter for the Puerto Rican pasteles. The rest of the vegetables I know green bananas, calabasa or Pumpkin and yuca. Please help, I'm making pasteles for Christmas and wanted to use his combination of the vegetables he had mentioned, thank you kindly...regards...Jorge Rosado.
