This is so good and actually very easy. Unfortunately where I live (eastern U.S.) American whole lamb legs go for around $20 per pound right now.
Sam's Club has a boneless leg of lamb for $6.49 per pound. YMMV

The gaminess of lamb is directly related to the age of the sheep. So the larger the leg or shoulder, the gamier it will be. 8 pounds is huge. I'd prefer 2 smaller legs.

Where do I get “domestic” lamb? They are suppose to be less gamey flavor. The Lamb meat from New Zealand or Australia is too gamey tasting.

you cut the fat off really? not much fat on a lamb leg to begin with look for a leaner one if its that concerning, and next time if youre really need to, get a sharper knife and try to cut it off as a whole piece that was painful to watch and probably time consuming
