The pimento seeds, what is that exactly please? Also, the fenugreek, is that seads or leaf or powder? Thanks for the recipe, i made it even though i didn’t have all the ingredients, and its very very close to what i ate in Guadeloupe!

I had this in St. Martin and it was delicious. I’ll give it try to make it myself. Thanks!

I can't believe this columbo dish originated from Tamil Nadu, India. The word columbo is nothing but Gravy in Tamil .but we spelled in English as Kolambu. 😁

I seen a few recipes where they add provisions like pumpkin or eggplant or plantains. Is that common? I want to try making it but I want to keep it as traditional as possible

it's the Guadeloupean version. The Martiniquan version is different.

      In what way?

@firmbutton6485 The Guadeloupean Columbo is almost the exact same recipe as the original (Indian recipe). The Martiniquan version is very different because they had carrots and other vegetables (IDK the full recipe of the Martiniquan version because I'm from Guadeloupe)

A few more colorful vegetables would have really elevated the dish aesthetically👌🏾
