looks easy right, but it takes skill to work like that, I usually start with simple piano melody and add drums, most times it works fine with just piano, but coming up with other instruments is pretty damn hard, I mean melody wise - mix to melodies together so they fit each one. Layering same notes is cool way too add some nice space to sound btw

in your piano roll, enable the automation button, then on the bottom left select the drop down menu and use note velocity.
