Nice Vid but on start up, why wait for the smoke to stop before adding the Chicken? I think your little Thighs would LOVE to be drowning in that start up smoke. just my .02 Keep up the good work.
cook to 160 and let rest because carry over temp rises 5 degrees. if you cook to 165 and then rest, they will be overdone. smoke ring develops at lower temps with longer time. 190-225
I cooked my chicken thighs at 225°F for 45min reached around 105-110°F the chicken. I lowered it to 180°F cook for 30min reached to about 135°F then back up to 250°F till 160°F for chicken then let rest for 5-10min back on the smoker with bbq sauce blasted up to 350°F flip chicken on skin to crisp with sauce on till 165°F Juicy juicy juicy I tell ya folks. MAKE SURE SPRAY WITH BEER OR JUICE FOR HYDRATION.
Thats alot of work for nothing tbh. Why drop the temp after a high heat setting. You aren’t getting any more smoke. It would be easier to smoke at 275 til around 150 then baste with bbq sauce until 165 temp
For real...yuck! Too expensive of a grill to let it go to hell like that, not to mention putting food on there without at least scrubbing off the grates themselves.

Mike Quyl I like using hickory. I have use all of the treager pallets and hickory is the best flavor.

And if you wanted crispy skin you could just cook at 375 and baste 10 mins until temp. Literally get the same results with less work
