My Jamaican wife recoiled at the amount of Allspice you used. She said when she makes 2 pots of oxtail she uses around 10 berries.

I'm not even Jamaican and I said to myself that Guga put way too much allspice on that steak.
We have been using Kryddpeppar (Swedish name) or straight translation Spicepepper here in Sweden sens 1700 and you can find it in many of our national foods and specially in Christmas food.
As said it's a spice that "less is more" when you use it as it does have a high flavour profil and is great in long boil pots together with bay leaf.

To be fair, I'm pretty sure anyone who knows someone who has managed to become a steak master just through sheer experimentation and is fed by them regularly would be spoiled.
As a born and raised Jamaican I can agree with Angel. there is something missing. no Jamaican cooks with just allspice berries. Also, before I watch the last steak, I'm gonna say, Guga put WAAAAAAY too much on that steak. I'm interested to see how everyone reacts.

Yesh this appealing to the fans of uncle Roger by trying to shoe horn any spice mixture into being the MSG of x country is rather ridiculous, especially the times the product contains MSG like with Magi seasoning.
Allspice or pimento is really potent. So you have to use it sparingly. You can use the berries to smoke meat. Add a few berries to the charcoal. Nice job on the jerk marinade for the chicken, too!

@@Andre-dq6qd almost every Palestinian dish uses allspice. Maklouba being one of them. Interestingly, Palestinian spice mix is heavier on allspice compared to their northern brethren in the levant(Lebanon and Syria). By the time you get to syria, the spice mixes are more complex than just allspice.
I used to soak whole allspice in water for a day like you would with wood chips and then wrap it in foil with holes punched in it and put it on the coals when I did jerk bbq.

Allspice can also be used in apple pie, instead of cinnamon for a better result. You can also add some grains of paradise for a bit more spice/heat.
The reason All-Spice makes Angel think of the holidays, is because in the US we commonly use All-Spice specifically as a holiday seasoning. It's the only time of year it's common to use here. :)

Jamaican MSG is a bit of a stretch for allspice haha.
Yeah. Allspice is.. EXTREMELY aromatic, and overpowering. It quickly becomes a defining spice in a dish even in smaller amounts. While it's the star of the show, MSG is a backup dancer; a flavor enhancer akin to things like salt (and even sugar in some applications). Allspice really does not bring out any other flavor than allspice itself, at least from when I've used it..
Don't get me wrong, it's great, but oh my lord... A little goes a long way, and you do NOT use that like 'MSG.'

It's like after all this experience he has no clue about how to test something without just putting as much as possible. I can't believe he doesn't know, so he chooses to go extreme for views.
I would be way more interested in what happens if you use an appropriate amount or a little ground allspice plus allspice compound butter. Maybe you get a punch of flavor while not overpowering the steak.

I’m not gonna lie, that is an egregious amount of primento, I feel like that was a complete disservice to the spice and you should try seasoning the steak more moderately to truly get a sense of how good it actually is.
Im so happy you guys tried all spice. The Caribbean has so much spices, seasonings, etc. The next thing you guys have to try is trinidad green seasoning!! 🇹🇹

Hey, huge fan, been watching for years now. Happy to see some jamaican spices on the show. But that 3rd lmao! That was WAAAAAAAAY too much. I put about the same amount you'd use for pepper or garlic powder. And yea, it can go with everything. Meat, veggies, Jamaican Christmas cake, Sorrel (A Jamaican drink). Cologne, you name it!
we've been using Jamaican all spice on our steaks for decades in Scotland we have a cut of beef called Raw Beef Ham, where we use a cheaper cut of frying steak from the hind quarter, cut in very thin slices and coat it with the Allspice and flash fry it like 45 seconds each side ... tastes amazing

You will have to try the jerk sauce with actual scotch bonnet peppers, the flavor is very unique. I noticed you threw in orange habaneros when listing scotch bonnet

I've used a good quality scotch bonnet powder as well for some Jamaican meat pies. If you can't find fresh, ideally order some scotch bonnet flakes and grind those yourself, OR buy the powder if you're planning to use it up in a year. Not AS good, but DAMN good and you'll get plenty of scotch bonnet flavor. Combine that with some fresh accessible peppers like habanero and you get the best of both worlds honestly. Habanero plays nice with scotch bonnet.
Also, scotch bonnet in fresh hummus. That was a good idea.
Is there really that much of a difference? I've done side-by-side comparisons with ones I've bought from the grocery store, both are hot peppers with a kind of sweet fruity flavor. Legitimately would not be able to tell the difference if I was blindfolded, and I used to grow habaneros, so I'm super familiar with that flavor.
@@KamiNoBaka1 Ive grown both as well, including orange and red habaneros. I think the scotch bonnet has a smokier favor, especially when dried. Both have that fruity aroma but bonnets are smokier while habaneros are more floral, and spicier.

In Nicaragua we call this Pimienta de chapa. And we use it in cooking and drinks. I used to make beer with this. Even won awards in Taiwan in the experimental category.

You guys should make a video where you rate all (at least most memorable) your stake-experiments and rate it from S - F tier. It's nice knowing if your experiment tasted good or not, but it still makes it hard to compare to other great experiments. Keep up the good work!!

Guga, you gotta give the new msgs proper treatment by using just the normal amount. I love allspice, but its stronger than black pepper so you shouldnt use more than you would use black pepper.

Interesting, I'm Bulgarian and we use this thing in our cousine a lot, I didn't know it originates from Jamaica. We put it in pickled cucumbers or peppers, we put it in some sausages, we put it in marinates, etc.

Just the single fruit Berry. It is referred to as such because the flavour is as if it is many spices such as cinnamon,nut meg, and cloves . The Berry is not spicy in flavour and can be used on jerk, in baked goods, or hot chocolate
You can also add the pimento whole in stews

We use allspice (known as maustepippuri) in Finland for many foods, the best one probably being creamy salmon/fish soup imo

You need to try out Bulgarian Sharena Sol (Colorful salt) which is mixed Bulgarian spices it like Bulgarian MSG , it goes perfect with everything.

I'll gladly use allspice in desserts, but not on meat. Allspice, cinnamon, and clove reminds me of Christmas.
Allspice and other "warm" spices were popular throughout Medieval and Renaissance Europe, at least among those who could afford it. If you do more experiments with them, maybe invite Max Miller to make an authentic historical spice blend to put on steaks?
