How To Make A Croissant Loaf

- It's not just a loaf of bread. This is a loaf made of croissants. As in, we make homemade croissant dough with all of it's flakey, buttery layers, and we make it into a loaf. If that doesn't float your boat then I don't know what will.

@John Chrysostom Thats cool but i dont remember asking so shut the fuck up

dude, never stop. the amount of times when i have some time to spare where i just try some whacko recipes, yours included, has skyrocketed since youtube became such a source. thank you for your service. im a hobby chef so your insights and recipes are invaluable to me and have given me and mine many a tasty weekend. next step a nicer grill or a smoker. hmm
Go for the smoker man! Especially if the grill you have now is charcoal.

Oh my God. The 3 days it takes to make this are so worth it. Made it and my husband and I are taking 3 loaves with us to vacation. We each tried a slice before I wrapped them. So buttery and delicious. My husband said it was his favorite bread out of all the types I've made. He said it was like eating a big juicy boob lol. Anyways, thank you so much for this recipe.
I made this today (over the past three days actually) and it is absolutely 100% worth every minute and every bit of effort. Exactly what you would expect from a GOOD croissant, and a GOOD loaf of bread. It was also light and flaky and not at all indicative of having nearly a pound of butter in it. I made two loaves as the recipe yielded, but for one of the loaves I sprinkled in some brown sugar and cinnamon before rolling it up. It tasted like if a cinnamon roll, Danish pastry, and cinnamon toast had a threesome and had a baby and both baby daddies raised it as their own.
The recipe doesn’t state baking time, but for my oven it was 23 minutes. My oven tends to bake things faster than most ovens, but around the ballpark of 20-25 minutes for two 9X4 inch loaves is a good estimate.
I've actually done this before! I was planning on making croissants, but I ended up just making the whole dough into a loaf instead. It was the tastiest loaf I've ever had. 10/10 will eat again.
This looks sinfully good. I would definitely try it and love it.
Sincerely,
A French picky person
In a few days in new york... hmm. With someone special that well know when he posts it but not yet... hmm. Making a video with binging with babish... hmmm!
i got so excited when i heard he’s going to NY
I think it’s binging with babish too!! That’s the first person who came to mind who’s in New York that Josh would most likely collab with
Or he will be fermenting something with Brad from the BA test kitchen 😱
Babish said Joshua Weissman was one of his favorite cooking RUclipsrs on a small q and a recently so it's very likely.
100% babish
I went to college for baking in 2015 and lost my passion for it. Your videos are sparking that passion again. I found you on tiktok and I've never been so grateful for that app. Your videos are helping reignite my passion and I will forever be thankful! thank you for your amazing baking videos!
alright enough of the sappy comment!

This is insane! Never thought of making a croissant bread! You are a genius!
Lots of hearts from a small baking & cooking youtube channel!
Totally agree! 👍💗
Hi Joshua ! I’m French and this loaf has a name: Brioche Feuilletée very simply !
Great recipe
This channel is the sequel to "Good Eats" that I have been craving for so many years.
THANK YOU
You obviously havnt seen good eats:reloaded. Josh is a whole nother level though!
This is my favorite cooking channel. 👍
A scoop of precision, a dash of practicality, and a generous scattering of hand-tossed humor . . . and of course B-roll -to taste.

I love you, Josh. I swear I do. You are like the geeky college kid who loved film, dropped out and went to culinary school instead. (Paraphrasing here, we know that's not what you did, love.) But I just love your layman's approach to making gourmet style food. I am so grateful for your videos because my bourgeois self loves to make fancy looking food, but it tends to look like it belongs on 'Nailed It'. Your techniques and explanations are SO HELPFUL.
Again, I love you.

I'm about a week-old new subscriber; I actually found you thru your bao and cast iron videos. After bingeing on your videos last weekend, I am impressed that you are amazingly informative and precise. Thank you for that. You got me baking again which no other YT baking channels have been able to do since I am not a recipe person. Congrats on your 1MIL subs mark! Keep up the great content. I would love to see you make ciabatta, egg rolls and more international recipes with your own twist.

He actually mentioned that he likes using grams and stuff but cannot adapt to it due to American reasons
also as the start he took a shot at him by mentioning that a lot of people were making his croissants lol
I'm not a fan of him tbh, he's so arrogant about his recipes sometimes

It looks amazing! I'd love to see how it toasts. The pockets look perfect to hold onto any spread.
Two of my favourite things combined into one. Wild.
Im EARLY. As promised with consistency this video is as extra as ever. Love it
Made my dough on saturday, folded in the butter on Sunday, and now a loaf is currently in the oven! i cant wait to try!
How about “Croissoaf” instead of “Croaf”
Pronounced like “Cross-oaf”
So it’s like a *Cross* between a Croissant and Loaf
Yes

That works
A loaffoint
A cross between a croissant and an oaf.
I made this today!! They are delicious but rich!! I guessed on the time.

Me: I hope Brad doesn't get too jealous that you're hanging with Babby
I found this because my mom wanted to buy store bought croissant bread and I recently succeeded in making croissants at home multiple times already , and thought I could give this a shot. and
Oh my goodness was it worth the wait. It may take 3 days but must of the time is spent in the fridge.
The first day it took less than 1 hr to make the dough and the 2nd day around 2 hrs and the 3rd day was pretty easy as well. I was worried it might not come out as good as his because my dough wasn't as straight lined and perfect shaped as him, but I cut excess away (used the extra dough stripes and rolled it up and baked them for 10-15 minutes to make little crossiants and spiral buns) as a rolled the stripes into logs and it came out so nice looking and flavorful. It was in the oven for around 26-30ish minutes at 375 degress F.
When it came out it reminded me of brioche bread a little but the exterior is a crispy beautiful golden color and the inside it soft and flakey. Will have to try more of his recipes!
When he said “But do you know what else will keep you from being sad forever? B-roll”
I felt that
I just made this, with a balsamic allspice blueberry compote to go with it, and now I never want to eat anything else ever again. This is such a good recipe. Really appreciate all the notes in here on debugging the dough, as my first attempt at croissant loaf from a different recipe was much worse.
How long do they bake in the oven for?
Get Crafty Crafty I’d say 35-40 minutes or until the inside of the bread registers at 190 f

Brandon Rogers here for this comment.
I LOVE IT!!!!!! BUT WHY CAN'T I ROLL THE WHOLE THING INSTEAD OF CUTTING IT INTO FOUR ROLLS, WHAT WOULD HAPPEN JOSH? SHOW ME :)
At catering school we were taught to make the butter thing with flour too, so that flour prevents butter from melting too much and create a mess (and you don't have to worry as much about the butter being too cold or too room temperature). The proportion is 500g butter/150g white flour. You mix them well, create the butter square and refrigerate for a bit. I don't know if you used this method too, but it can be useful if you mention it in any of the next videos. :)
helpful. thanks
And here I thought I would have been first 🤦🏽♂️😂

That loaf is a work of art!
How long do we bake the loafs? I don’t think you mentioned the baking time 🤔😂
20 minutes did the trick for me!!
I stumbled upon the same problem when I was ready to put them in the oven haha 😅
But 20 minutes was perfect for my oven! If your oven is a bit slower or faster, adjust the baking time to like, 25 or 15 minutes instead :o
Edit: and like Josh said, if the baking time is only like half way and they're already pretty brown, just turn the oven heat a bit lower :)
Bruh. Joshua has blessed us. I was wondering if this was possible, and if someone already did it. However, I've never found anything like this *anywhere* on the internet. This is honestly impressive and interesting 🤣

Nice one Joshua! That crumb looked fabulous. Made your cornbread recipe with some heirloom stone ground corn (I omitted 20g of sugar from your recipe and used half REAL CULTURED buttermilk and half whipping cream) and my wife made the mistake of taking some to work. Now her office mates are hounding her, and by extention me, for more.
I love this channel and am so glad I found it. You are excellent, Joshua.
Great video Joshua. I was in Paris a couple of years ago and breakfast always included a croissant every morning. My weakness is actually bread. I would take a cinnamon
bun over a chocolate bar any day. I've been following your blog for a few weeks now and I have to say, this one sealed the deal. I have just subscribed. Thanks!
