I always make this when my kids are sick | chao ga | Vietnamese rice porridge with chicken

  • CHAO GA | Vietnamese rice porridge
    3 lbs chicken
    6 scallion
    1 onion
    5-6 Ginger slices
    11 cups water
    1 cup uncooked, washed rice
    Diced Carrots- optional
    FOR SERVING:
    chopped cilantro
    Chopped scallion
    Fried shallots
    Beans sprouts
    Garlic chili paste
    Lime
    1. In a large pot, add your chicken, onion, ginger slices, scallion and water. Bring this to a boil. Once boiling, reduce heat and simmer for 1-1.5 hours. (Note: flip chicken half way through cook time)
    2. After 1.5 hours, remove your chicken. Allow chicken to cook and then shred or chop. Remove the rest of the ingredients (onion, scallion, ginger slices, etc) out of the pot. The only thing left is just the chicken broth.
    3. Measure out 5 cups of chicken broth. Add it into a pot along with 1 cup of washed, uncooked rice. Bring this to a boil, reduce heat and simmer for 45-60 mins (note: stir your porridge from time to time so it does not burn and/ or stick to the bottom. And add more broth as needed)
    4. After 45 mins, add diced/ shredded chicken and diced carrots. Combine well and cook for another 10 mins or until carrots are cooked. Taste test to see if you need to adjust anything. I adjusted with fish sauce and chicken bouillon. (Note: If you are not adding carrots, then cook until chicken is heated through. It should not take long)
    5. Your porridge is not done. Enjoy it with your desired toppings. I like to top my bowl with: cilantro, scallion, fried shallots, bean sprouts, chili, and lime.

    I just went thru surgery.
    I threw up everything post op.
    This recipe is the only thing I've been eating for the past week.

      I’m Cambodian as well, a lot of the foods my yey and ming make seems to be Vietnamese. I don’t think Prahok is Vietnamese though 😂

      I think a lot of SE Asian dishes are similar but not the exact same, like for us khmer ppl we do babaw chiem chrook (rice porridge with pork blood) and for viet their rice porridge is chao ga. Like how viet will have pho but khmer we have kathew, and I’m sure Thai, Laos etc. do their own rice porridge or noodle soup or dish. So maybe ur mom made something that was also made in vietnam besides in Cambodia! Ik another similar dish we have with viet is like this braised pork belly stew; that has pork belly chunks, eggs, and pig feet/trotters in a braised sweet brown sauce/stew.

    We have something similar here in the Philippines called Lugaw we don't add carrots it has chicken or other pork innards, we also add ginger, black pepper, and also fish sauce. Scallion is optional too. I love eating mine with Fried tofu dipped in soy sauce with onions and chili. This is definitely a comfort food. I would try adding carrots next time and see how it tastes.       lugaw is umbrella term for rice porridge, but this one is more similar to arozcaldo (a form of lugaw flavoured with chicken, ginger, and lemongrass)

    I love how all of us have some version of this comfort food that our moms made for us when we were sick (which for me was a lot). My mom made a sweet version with cinnamon, raisins, milk and spices. She’d bring it to me in my room and it was honestly it’s such a nostalgic dish made for me with love. I personally LOVE a chicken and rice porridge. Hope your boys are feeling better soon.

    It's so similar to filipino dish called Arozcaldo, also eaten mostly when sick. The only difference is that arozcaldo is flavoured with lemon grass and ginger in addition to onions and scallions at the end as toppings. fish sauce and lime are also traditional condiments for it :D

    This is like congee, it seems many cultures have similar rice porridge. I am preparing to make this when healing postpartum. It is warming, nutritious and easy to digest. I've learned that women go from normal yin, to very yang and hot during pregnancy, then to exaggerated yin and cold after delivery and should eat very simple and warming foods. No cold food or beverages are recommended the first week postpartum in TCM, we'll see how it goes😅

      Congratulations and much luck to you momma. Maybe consider Korean seaweed beef soup for postpartum, too, it’s supposed to be very nutritious for recovering moms.

    I've done the Korean version of this and it's so comforting. These kinds of dishes freeze really well too so it's great to put aside a double portion for days when cooking isn't going to happen 😅

    Alternative veggies instead of carrot: onion, small mushroom, scallion, bean sprouts. In Vietnam there isn't a lot of veggies in the chicken congee, there will be a dedicated side salad.

    Oh this is pretty common porridge. I thought there would be different ingredients. I am Malaysia hence our porridge then to have more spices while this type of porridge usually for kids.

    It is kinda crazy, that no matter where the cooking trditions are very simillar to one that are on the other side of the world.

      I make this for myself korean style and we call it juk. The method is extremely similar, we just use garlic instead of ginger and have different toppings.

    🥹 My mom made this for me as a kid when I was sick too!! But she just seasoned it with a little salt and black pepper. If I’m being honest, she STILL makes it for me when I’m sick. 🤭 But I love this dish because it’s made with so much love. 🥰

      It’s cooked. It’s just hard to tell because the skin’s not brown like it would be when roasted or sautéed.

    Oh that is interesting. I always thought it was Korean. Because my mom actually taught me the same way. Only difference is that we would leave the rice out soaked in water so it can get enough liquid in then insert the rice.

    Stupid question, but could you use frozen instead of uncooked rice?
    Recovering from sinuses and this looks so good.

      i dont understand all but if you are asking frozen leftover rice you still can use it but need to keep an eyes to your pot and adjust the ratio of water/broth how you like the your porridge thicker

    Uhm, I don't want to be mean but I would like to give you a little bit hm advice. I don't think you should cook a chicken' ass with the rest of it, in my family there is a saying that it can make a dish a bit bitter and it isnt good for our health to it this part of birds. Maybe it has something with hygiene or toxins, dunno. just wanted to share it with you, becase it is my first time when i see someone who doesn't cut it off 😅 have a nice day 😊

    I think this is how my mom used to make it for me as a kid. She hasn’t put carrots in it since then and claims that she doesn’t know what I’m talking about either. I’m gonna have to try this and see if I can recreate nostalgic feelings. :)

    This is a lot better than what my mom gave us when we were sick. We had to drink peppermint tea with no honey or sugar until the gi upset went away.

      I use fish sauce a lot and I personally think fish sauce maybe contain too much salts. For 1 year old you might want to make the food a bit lighter 😁

    We do the same like this but we cut the bread to smaller peaces and the we dump the chicken and the broth into it and we put rice too and then we eat.

    This brings back so many memories as a kid. My mom would always make Jook or Chinese Rice Porridge with chicken or pork or dried scallops when I was sick because its easy for the stomach to digest and plain enough you wont throw it back up. On a good day that's not a sick day adding a century egg would be good along with green onions and black pepper. I never liked Jook as a kid but as I've grown older, its a major comfort food for the soul.
