    Welcome Back Greg!! I have had my EZ wok for a couple months now and have made 5 of your recipes as well and a few Thai Recipes that I used to make on the stove! not any more!! LOL The wife and I went camping and took the EZ wok with us and you should have seen all the other near by campers coming over to see my cooking on it! it was fun! I told them to check out your channel, unfortunately the campsite we were at did not have wifi but I hope they check your channel out! we are going camping again for the 4 of July long weekend and can't wait to cook on it there as well, as always great video!!     I was wondering about a cookbook from you. That would be great. Question...several of your videos you refer to fresh chicken stock. Is this something you create yourself? I.e, whole chicken in pot to render the stock? Or, is this store bought? Thanks, Greg!

      Hello ronkreed,
      Yes I hope to put a book together sooner than later.
      Chicken stock, I do use a whole chicken but I debone it first to have all the meat to use for dishes, I use the carcass to make the fresh broth. Most of the time I will buy 2 to 3 roasters and prep the meat for freezer then I can use only what I may need when preparing a meal.

      Hi Greg. LOL. I just watched the vol 29 episode on broccoli and chicken where you explain well the chicken stock process. A little premature with my original question on that subject. I just need to keep watching to learn, and I will. Another question I have is what you do with the excess oil. Can that be reused and stored safely for later use? Thanks

      About the oil, if I know I'll be cooking the whole week I will line my wire mesh strainer with a couple layers of cheese cloth I will always run my used oil thru this, but once it loses it consistency I will discard it. If I'm doing a few meals during a week same thing, but generally I will not keep the used oil more that a week.

    Question re your technique to tenderize the beef: did you learn this from a family member, working in a restaurant? I've never seen it before or read about it. I'm always afraid to stir fry beef. My mom is Chinese and have always looked for a way to make beef tender for a stir-fry. I've always used cast iron skillets to stir-fry b/c they hold heat so well. A well-seasoned one is as easy to clean as your wok but you're always aware that it's cast iron and take continuous scrubbing. What is your wok made of? Thanks for your time. I enjoyed your video very much.

      Hello L Johnson,
      Yes that's how the chefs would do it in my family's restaurant. It's important to mix it well and pound it for a couple minutes, also if it's sliced thin it shouldn't cook very long, with the high heat really less than a minute because it gets cooked again in the sauce, the way I did it in the video.
      I use a 14" handheld carbon steel wok, same as we had in the business.

    Every single Chinese recipe book out there is adapted for home kitchens which don't cook the same. Your videos are amazing and the first I've found showing the recipe, technique, pacing, planning and process to do it right. I look forward to more videos and lessons and hopefully a book
