The second slice you ate, Danny, the Detroit style hails from my hometown. The 'pans' these pies were originally baked in came from the small parts tins used in auto assembly plants. An autoworker brought a few of the worn pans home, cleaned them up, buttered/greased them and baked some deep-dish pizzas in them - the Detroit style pizza was born! A happy accident that became the dominant feature of this pizza is the crispy crust, made even tastier by the cheese that would become a caramelized component of that crust. The example you're enjoying looks to be a faithful specimen. Enjoy!
