      Discovered by accident this last Sunday that oven reheated pecan & oak smoked chicken thigh (with drum attached) had so much flavor. Best I’ve done and 2nd best I’ve ever had!! Couldn’t believe so do some chicken please 👍

    Great video, I feel like this was a straight up test. I have only used paper wrapped and no wrap so far but I’m smoker two briskets this weekend and going to try paper and foil wrapped. Thanks

    Love your shirt I’m going to try the foil boat next time. I usually cook mine to 180 and then put in the holding oven overnight at 150 for 12 hrs. #creekstonefarms #brisket 🇺🇸🥃

    Love the review, I’ve used foil rapped with no tallow for a while and gotten a nice bark but all the juices stay better, I’ll definitely need to try the paper route and boat method coming up #creekstonefarms

      Thanks! Goldee’s is cook until done and then wrap in foil with Tallow to hold only. Make sure you try that one too. 🍻

    I haven't made a #brisket on my YS 640S yet but I need to. Interestingly #creekstonefarms is just down the road from where I live. Never tried the foil boat or Goldee's so will have to do both now. Thanks Jake. Hope it cools down for you up there soon.

    Great video. Would love to see which method worked best for the KJ. Also on the creek stone farms site, did you choose the competition cut? I only see one type of prime brisket available. #creekstonefarms #brisket

      I don’t recall if it said competition cut or not. They were the prime ones though.
      I don’t think I could get 3 briskets in a KJ. Maybe if I had the extended rack. I think it would be tight though. 🍻

      @@RumandCook well if not 3, then maybe the two you think would best work. I’ve cooked 2 max in mine. I’ll also say I’ve tried all those methods but was hard to tell which was best because the briskets themselves were Costco choice grades which were just not good. Looks like I need to start forking over more money if I want better quality briskets…sigh.

    I missed a Creekstone sale? Damn. I've always wanted to try their briskets, but they're almost three times what a Prime brisket at Sam's is.
    Little experience with 10-12 briskets 😂 I've been smoking for about 5 or 6 years and I've only cooked the one (was intimidated for years, and since I made one, I've just been too cheap). I've done a lot of Boston Butts and ribs though.
    So for the Goldee's hold, you cooked it until it was tender without wrapping, then wrapped with tallow for the rest, right?

      Not so much brisket, but beef in general, you get what you pay for. I’d rather spend $50 on a steak and eat at home, than going out. Have a way better steak.
      Brisket is definitely better with high quality beef, but you don’t notice as much of a difference. It’s there though.
      Yeah I cooked till done, wrapped with Tallow and let cool for an hour or so before putting it a 155F oven. 🍻

      Do some research, from what I’ve been told many can have the offset adjusted and go lower than their standard low setting. 🍻

      @jeffreygionet5827 had to make a business decision. I have a video called number 1 video on a pellet grill. That shows it in detail. Basically cook unwrapped until done, wrap in foil with tallow and hold overnight. 🍻

    Having seen all three methods done all over RUclips I was surprised that there was a big difference in smoke flavor. Everyone says after 4 hours or so you really don't get much more smoke flavor so I may rethink this. I think I'll try the Goldee's method with my next brisket. Only problem is I my oven only goes down to 170 and there is no way I could convince the boss that I need a warming oven. We shall see what happens... #creekstonefarms #brisket

      Meat doesn’t absorb much smoke after 160F but the bark will. Google and see if your oven can be manually offset down to 150. You can rest a brisket at 170F just have to let it cool below 170 before putting it in your oven. 🍻

    I always wrap in paper until recently doing the Goldee's method. Have you tried paper wrap with the foil boat? It cuts down on cook time while saving the bark. #creekstonefarms #brisket

    I set up a Drive Program in my app for my Yoder. I want to wrap my brisket at 165 internal. I set my first step to have a temp of 225 until it hits 165 internal. My second step is at 225 set temp until it reaches 203 internal and my 3rd step is to hold at 170 set temp. Will I get alerts when step 1 and then step 2 are achieved? If my step 2 is for the brisket to get to 203, is it going to alert me when I should remove the brisket so it gets up to 203 or when it hits 203? Thanks for your assistance.

      There will be a pop up, I’m pretty sure it has sound. I disable my sounds so I can’t remember for sure.
      I’d push it to 180 before wrapping. If you are going to rest at 170, I would pull when probe tender, wrap, and rest to 160, then put back on to rest as long as you like. 🍻

      Thanks! Def still lots to learn. I took some into the office and then vac packed the rest. You can make chopped brisket sandwiches, reheat it a whole one in sous vide or oven, use it for tacos, pizza, chili. Lots of options when you have it.
      Much of mine goes to neighbors and work though because my wife doesn’t it eat and I cook a fair amount for videos.
      You can also get a 9 or 10 pound one. 🍻

      @chris_favreau haha it’s just not stuff I eat. I never eat leftovers besides pasta or turkey, maybe French dip. Hard to do an authentic video making things I wouldn’t eat normally.
      I only vac packed the brisket for a party because I won’t have time to make everything that day. 🍻

You may not like leftovers, but I know that you love building things... it'll help you build your channel. Besides, you don't have to eat it, just cook it and give it to your co-workers😉🍻
