When I went to Rajasthan I had their extremely rich Lassi, fell in love with it so much, I had it everyday in my stay there. Oh...and... When I say it's rich...I mean RICH!! It's basically full cream cultured sweetened milk with a creamy layer of cultured cream and butter floating on top. It's just pure love in a giant earthen glass!! I miss it the most.

The "SKIN" that you are getting on your lassi is the Cream on the top of yogurt when they make it. They scoop off the Cream and serve it along with the yogurt for an extra special addition.
Luke Martin -- My Punjabi Indian neighbors taught me how to make yogurt, when I was a teen. To this day I still make my own yogurt. About delicious...I would rather have a dish of rich, creamy yogurt instead of ice cream for a snack. It's amazing. I'm glad you were able to experience it. Nothing better than homemade yogurt...unless it's homemade kefir. Loving your videos and traveling around with you.

@Luke Martin the main ingredient is missing in the Rajasthani thali there. The Ghee. Visit Jodhpur and order in any restaurant the same thali (daal bati), you will offered to have ghee in it. Jaipur missed it.
I heard you will be going back to Taipei Taiwan, try out this place. It is something different from a regular restaurant. The food is Indian Chinese fusion Food, the restaurant name Mr tandoori 台北市萬華區中華路二段313巷2號
Its saffron rabri (milk boiled till thicken and get some milk cream layer) in Gujarat we call it Basundi just difference we add cardamom.. And the kulfi (Indian Ice cream) you are having you got right its frozen rabri
