I love how she makes the noodles right on the countertop! here's a little tip, I've actually recently upped my noodle game by realizing that even noodle dough benefits from two or three minutes of kneeding to develop the gluten. It gives your noodles a little more structure and a tiny bit of stretch, it really is a good thing!

She is like a fine wine, although 50 isn't that old these days, my mother and Giada share a birthday and we were just discussing how people hype 50 up as "Old" haha my mum gave birth not long ago and said her body was in more stress carrying me in 1990 than it was carrying my little sister recently haha she say's "you are as young as the mind, body and soul you nurture and take care off"

Perfect recipe.. I have been following the amount of egg for a few years now.. using different flour here and there. I sometimes have limited flour options living on the Big Island of Hawaii. Pasta is Always just amazing.. note the humidity here keeps me on my toes at times.
It was a handful. In fact I just did that too with basil yesterday when I made my pasta sauce. People usually put basil in a glass of water to make it last at least 3 meals. For me I would have used it all.

I’m surprised she didn’t mention that the bottled puree is called “Passata” You can find it in the grocery store. I know Cento makes it. I don’t know who else. The difference is that passata has genuine San Marzano tomatoes. Lower in acid, eliminating the need for bay leaf, or sugar. You get delicious sauce, in a hurry. If you don’t have a parmesan rind, just add 2 tablespoons real butter, right before serving. Stir well.

First off this is my mom's recipe as well, she was born in 1931, not Italian. Welsh-German heritage. I've been in love with Giada and have made MANY of her recipes, always on point. But, at 1:39 they skip her adding more flour.

Teresa Doyle You wouldn’t want to make fresh pasta in advance but you can freeze a sauce like this for at least 3 months. In the fridge, maybe 4-5 days because of the sausage :)
