I made this for myself yesterday. Turned out great! And it's relatively cheap if you substitute with chuck roast and bacon, still tastes delicious!

I like your version of Irish Guinness Stew! Using Pancetta is a great way to infuse more fat and flavor. Using bacon will work fine yet you have to want the smoky flavor bacon adds. Personally, I even put bacon in my tomato sauce so I enjoy it despite my Italian roots opinions!
