Fish Curry - How To Make (Red Roman)

  • This has definitely got to be one of my favourite fish curry recipes. With basic ingredients, the tantalizing flavour hits the taste buds on all the right notes.

    Ingredients:
    Fish fillets x 1 Kilogram
    Oil
    Tamarind x 1 and a half table spoon (Soak and dissolve in water then use siff)
    Salt
    Tomatoes x 4 grated
    Onions x 1
    Green Chillies x 4
    Garlic x 3 cloves
    Mustard Seeds x Half teaspoon
    Curry leaves x 1 spring
    Garam Masala x 1 Teaspoon
    Jeera (Cumin Powder) x 1 Teaspoon
    Borrie (Tumeric Powder) x 1 Teaspoon
    Chili Powder x 1 and a half Table Spoon
    Ginger and Garlic x 1 Teaspoon Each (Preferably Fresh)
    Tomato Paste x 100 grams
    Coriander x 1 Bunch
    Water x 500 ml
    Method:
    Add onions to hot oil
    Add mustard seeds
    Add garlic cloves
    Add chillies
    Add curry leaves
    Mix well, braise until onions change to a light golden colour
    Add garam masala
    Add cumin powder (jeera)
    Add tumeric (borrie)
    Add chilli powder
    Add ginger and garlic
    Mix well, allow to simmer for about 30 seconds
    Add grated tomatoes
    Add tomato paste
    Add 200 ml of water
    Add salt to taste
    Mix well,
    Add tamarind water
    Mix well, simmer on medium heat for 5 mins then give quick stir
    Add the pieces of fish and place around entire pot
    Cook for 20 minutes
    Remove from heat
    Add coriander without mixing it into the food
    close pot and simmer for five minutes.
    Serves 5
    Serve on rice, with flat bread or roti.
