She pretty much raised us because mom had to work. (I think she was just trying to keep me off the street and out of trouble) She ha a huge recipe resume stored in her memory. Aside from the incredible food she would cook, the pastries and pies she cooked were legendary. Your videos just bring back so many memories from my youth. It is amazing how my mom and aunts used to cook using the same recipes that grandma taught them. They were good, but never as good as grandma's. Unfamiliar with the cooking technique, very interesting. I think extending the metal on the cookie irons an inch or so would make using them a bit easier. And they certainly have eye appeal.
We call these Window pastry in my country (Iran). I remember when I was a kid my mum woke up from her afternoon nap one day and started making these while still a bit sleepy. It was a lazy afternoon and I think it was just my mum and me. I was so happy and fascinated looking at the pastries frying. I have thought about that memorable afternoon a lot throughout the years. 😊

My mom had a dual metal iron that her rosette molds screwed onto, that had a wood handle. The Italians do pizzelles and the Scandinavians do krumkakes- both on a very thin waffle like mold. Rosettes are a LOT easier to make!
