  • We are kicking off Pride in Food Service week with a bang!
    In honor of this week, Creative Solutions in Healthcare hosted a contest among our dietary team members. The theme is “The Zest is Yet to Come” and is featuring desserts made from citrus fruits.
    For his entry, Keyshawn Collins, cook at Marine Creek Nursing and Rehabilitation created this delicious Orange Cream Cake. Keyshawn has been at Marine Creek for one year and is currently enrolled in culinary school. He is passionate about cooking and makes our residents happy every day with his culinary expertise and creativity.
    Learn how to make Keyshawn’s delicious Orange Cream Cake with the recipe below.
    Orange Cream Cake Ingredients:
    One whole orange and zest
    6 cups of whipped topping
    5 lbs of cake mix
    1.5 lbs of Cream Cheese
    1 lb of powdered sugar
    6 oz of milk
    1 Tsp of orange extract
    5 cups of orange juice
    1 Tsp of vanilla extract
    1/2 stick of butter (1/4 cup)
    Candied orange slices
    White Chocolate Sauce
    Orange Cream Cake Instructions:
    1.Preheat your oven to 350°F
    2. Mix your cake mix with your orange juice and orange extract. (optional: 6 drops of orange food coloring to give it the orange color).
    3. After mixing all your ingredients thoroughly, spray your baking pan with non-stick spray and pour your cake in. Put your pan in the oven and bake cake for 15-20 mins until thoroughly cooked.
    4. Now it's time to start on the cake filling for the middle of the cake. You will start of by whipping your butter and half of your whipped topping. Then you can incorporate your cream cheese (a little at a time) and blending together. Then slowly add in your powdered sugar until you reach your desired consistency.
    5. Once the cake is fully baked, you will cut your cake into two halves and fill the top of one cake with your filling. Next, you will dice your orange and add it on top of the filling.
    6. You can now add your second half of the cake on top and cover with the rest of the whipped topping. Once your cake is fully iced, add your candied orange slices and drizzle the white chocolate sauce over it.
    7. Enjoy!
