I grew up in Germany as my dad was in the Army. We lived in Osnabruck and Paderborn. We did all the tourist things, Berlin and Holland as well. As strange as it may sound I would recommend visiting one of the concentration camps. It's such an experience that is so hard to explain. Enjoy your trip Germany is beautiful ❤️
I live in the Northeast of Germany, on the Baltic Sea coast, about 2,5 hourse north of Berlin, a region that is usually overlooked by international tourists because it's quite rural and there isn't much tourist-y infrastructure and none of the big "flagship" attractions. Going north from Berlin you could visit the "Mecklenburger Seenplatte", which is a beautiful cluster of lakes and rivers with many adorable small towns. The Baltic Sea coast is also beautiful and has a bunch of different regions with beautiful nature, a huge variety of beaches and towns and cities of different sizes. Many places are quite tourist-y, but it's still a lot more idyllic and natural than, for example, the seasides in England. Also, the islands of Rügen (Germany's biggest island!), Hiddensee and Usedom, as well as the Poel and Darß peninsulas, are like their own little worlds. This part of Germany, from the southern coast of the baltic sea down to the state of Saxonia, was also part of the former communist, soviet-associated GDR (1949 to 1990) so there is a lot of museums and historical sites to visit around this topic. There is a Soviet submarine in the town of Peenemünde, right around the corner from the weapons manufacturing plant where the secret WW2 long-distance weapons were developed. In Rostock, you can visit the former GDR secret service jail where political prisoners were kept, as well as a lot of other historical museums on different subjects, as Rostock has one of Germany's oldest universities and has long been a hub for culture and science in the region. In Stralsund, you can visit the Deutsches Meeresmuseum "Ozeaneum", a giant beautiful exhibition of the sea and of marine animals. Both of these cities also have beautiful, partially medieval city centers. The nearly perfectly intact city center of Wismar even is a UNESCO world heritage site. Edit: I forgot to say that since you'll be in Germany around Christmas, we also have quite a few small Christmas markets, although they're nothing in comparison to the giant, traditional markets in the South! However, especially in Saxony and Thuringia, you can find quite a few snacks, knickknacks and attractions you might not find in other parts of Germany, since the proximity to Poland, Czechia, and a population of some protected indigenous slavic minorities in the Lausitz region have their own very specific regional culture.

You might like mudflat walking (wadlopen in Dutch) you can do that in the North of Germany and the Netherlands at the Waddensea. It’s pretty cool and you’ll probably spot some seals.
