Greece | Summer vacation | Greek Stuffed eggplants "Papoutsakia"

Here we are, Greece! Our first stop for our trip is usually Korfos. It is only a 1.5 hour drive from Athens and it feels like an island. Beautiful, peaceful and relaxing. Come with me in this video to Korfos and cook with me my favorite summer eggplants. If there is something that I really love to eat, it is eggplants. I love them cooked almost any way. Here is my version of “papoutsakia” with cheese on top instead of bechamel. A classic bechamel is made from a combination of milk, butter, and flour. The Greek version, besamel, includes the addition of egg yolks, which gives the traditional white sauce a light yellow color. Watch my version with cheese! Yum!
