As a Canadian, I cannot lie, I am finding the Rainbolt vs Canada "war" and his determination to study the interior shots of 2 major cities so far, both hilarious and admirable at the same time.
I think Canada is especially difficult because the geographical size of the country accommodates many architectural styles, most of which originated from other places, especially Eastern Canada, where the strong European links go back 4 centuries. Plus, it's bilingual. It's only a matter of time. Perhaps a good insight would be to look at heating. Since Canada is in a cooler climate, effective heating of the space is going to be paramount for usability. So when you get a cattle museum that looks like it's in English, but there's baseboard heating and low ceilings, maybe go Calgary instead of Amarillo.

I feel like I have been to that exact museum in Quebec City. But I also visited multiple museums and most of them had that style inside - plain and kind of European but not fully. I didn't expect to be right, but I guess visiting Quebec City over a decade ago burned itself into my memory. Understandable though; it is a great place which I highly recommend visiting. Even in the winter when it's deathly cold.

If it makes you feel better, as someone who grew up in Montreal and lives in Toronto, I was guessing Netherlands on the QC location. Quebec annoyingly has a couple spots with extremely european architecture (so much so that Montreal and Quebec City double for Europe in film a lot)

Parana pines are actually pretty common in northern Rio Grande do Sul, especially in altitudes above 500m. You'll see them in south São Paulo and the southern tip of Minas Gerais at places above 900m or so as well
