      I have never been to Melbourne so I can't comment.
      Perhaps someone in Melbourne here can give a suggestion.
      That being said after my recent trip I understand the meaning of "suggestion" and "my personal recommendation" a little better.
      Hearing it from others is one thing but to actually experience it and taste it for yourself is another.
      Hope to make a trip down there one weekend and replicate this format. Then I will be able to answer this.

    Hi Leighton, I am surfing for smoke short ribs and it leaded me to your Pho , it is very interesting to go back to improve my pho by your experiences. Hopefully next time I will make it better for my family. It is just a hoppy

    I went to Pho Le a few times when I was in HCMC with my wife and brother. When we first tasted the broth we immediately stopped and looked at each other in disbelief. This pho was unlike anything we'd had ever tasted before in the States. Incredibly rich savory and tasty. We were asking each other why hasn't any restaurants in the states replicated this taste? Now we know why.

    Glad to see you enjoy the trip and tasting some pho in HCMC. I expected pho 24 to be pretty average. I went to one a long time ago and guess they haven't changed much. Haven't been to the other pho restaurants so can't comment.

      Thanks Nam loved it.
      One thing I learnt is until you taste it for yourself you can't judge.
      Eg can't take recommendations from your Uncle or Aunty that this place isn't good (with their recollection from 30 years ago...the last time they were there!)
      Yes some places on this list have a reputation and you hear the name thrown around a lot but it is a hit and miss.

    Hi Leighton - I just discovered your channel and have watched quite a few videos (amazing content). But I cannot find info on how long you roast the bones and at what temperature?

      This one really depends on the strength of your oven.
      My exact setting is 300 degree C for 25 mins - keep in mine I'm using a commercial oven with the oven fully loaded.
      At home I would crank it as high as the oven goes to get a nice sear on it then lower it until golden brown, i.e 250 degree C for 10 mins > lower to 180 C for another 15 mins and you'll see why I only do it this way. In other words allow a good 30 mins of roasting.

    To be honest!!! I grew up in Australia and to me the best Pho is actually in Australia. We got the best beef here mate. I have tried countless Pho in Vietnam but nothing tasted like the Pho in Australia.

    Leighton, I live in Toronto, Canada. And there is my favorite Pho place called Pho Linh. The broth has a special flavor, slightly herbal floral. I cannot figure it out, it has a special taste. Any ideas?

      Thanks for sharing - I like to take notes of everyone's favourite.
      I do not have the answer but it's my life work on this channel is to get to the bottom of it.
      My favourite Pho restaurant growing up as a kid, I was told they put cocaine in it (it was that addictive and memorable).
      This is why I refer to it as the X-factor. Very few places can do it so I know it is something "extra" they are putting in.

    I've had many bowls of pho in the US. If I have a chance to improve, getting rid of the uses of MSG would be the top of the list, substituting it by other natural ingredients rich in umami flavors esp. those used in making dashi. Also using shirataki noodle as a low carb alternative, as increased num of ppl turning to lower carb diet. Your vids are informative and thoughtfully done, I enjoy them.

    Tôi là 1 người không có cảm tình với Phở cho lắm, vì tôi cũng ăn khá nhiều nơi nhưng nó rất nhạt nhẽo, vì vậy nếu chọn giữa Phở và Bún Bò Huế tôi sẽ chọn Bún Bò Huế là món tôi yêu thích hơn. Nhưng năm 2015 tôi được 1 người bạn dẫn tôi đến ăn ở Phở Lệ, trên đường đi bạn tôi nói với tôi về Phở Lệ rất nhiều nào là quán đó bán rất lâu đời rồi. Với tính không thích Phở nên tôi cũng không bận tâm lắm về những điều anh ấy nói. Nhưng khi đến nơi tôi mới thấy được quán Phở giữa lòng Thành phố nhộn nhịp mặt bằng to ở đường Nguyễn Trãi bán từng ấy năm thì đáng nể thật. Tô Phở to đùng, giá 60 nghìn đồng năm đó khá cao cho 1 tô Phở nhưng đổi lại rất ngon, rất ấn tượng. Cũng từ đó tôi mới thấy Phở ngon như thế nào nếu bạn đến đúng quán chất lượng, đúng rồi phải thực sự chất lượng mới có những khách hàng ruột ghé quán ( nhà hàng) suốt mấy chục năm như thế!

      Trước khi thử tô này mình cũng nghe rất nhiều ng nói trên Google hoạc ng nhà.
      Cô chú thi nói “giở k ngon” mà ý kiến này k có giá trị tới lúc mình tự thử.
      Có lý gio quán này đông hàng năm. Giờ mình hiểu tại sao.

      I've had my fair share of msg laced Pho and this wasn't it.
      There was a rumor going around when I was a kid that my favourite Pho store put heroin or crack in the pot to make it so addicted. People would wake up in the middle of the night craving a bowl.

    My mother and I left Vietnam on 04/0/19975. We knew the true taste of the Pho" in Saigon. We came back in 2018 & 2019. On our trip in 2019 we were recommended to go to Pho" Le. by a Vietnamese American man of my age. We heeded on his suggestion and went to try Pho" Le. on our second day there. What was a big DISAPPOINTMENT to us. We tasted the broth of our individual bowl of Pho" and agreed that it was slightly salty. We adjusted the flavor of the broth with the lime to lighten the saltiness. As we get through the first half portion, we both noticed the broth became sweet like sugared tea. We couldn't finish the rest of the remainder and left. We agreed and confirmed that Pho" Le. was HORRIBLE! A few days later, we tried Pho" 1954 on the corner of Truong Dinh. Street and Le Thanh' Ton Street, which was also one Block from Ben' Thanh- Market. We found the true taste of Pho". The broth was clear, tasty, savory and well blended and cooked like the actual Northern taste to us. Pho" Le. was owned and cooked by Chinese-Vietnamese owner. Pho'' 1954 was our top and only the best choice! The COVID-19 Pandemic may have caused Pho" 1954 to close? We hope they will reopen when my mother and I visit Saigon again in the near future! Don't go to Pho'' Le.!!!!!!!!!!!!!!

    Leighton!!!!! I just became a fan of your videos! My names William from Chicago. My mom is born and raised Vietnamese from the war I’m first gen 37 years old. She just taught me how to start cooking pho and she uses the blend method! She calls the spice mixture the “tea”.       Have heard the rumours about this ingredient having the ability to bring the x-factor but definitely more to the story.
      If it was that simple everyone would have it tasting like this place but what I’ve been through I can say none came close (except maybe Pho Phu Vuong).
