I agree with you, sometimes it became my dilemma, I haven't touched a paint brush or a pencil for so long because of being perfectionist that I'm afraid I can't get satisfied.. And I feel like I don't know how to draw anymore
There are a lot of artists on RUclips who paints photorealistically but I would prefer to learn this kind of technique instead. Check out Peter draws. He doesn't do paintings, but it's essentially what you said. He keeps drawing seemingly random lines, and out comes a piece making you feel it was planned to look that way from the start
Soumil Sahu Peter Draws is great, yet I feel his style is almost an exact opposite of this. He focuses a lot of line and form whereas Mr Shibasaki emphasizes color and feeling. I admire both of them greatly. I feel that Peter Draws uses his random lines technique as simply an idea starter rather than a philosophy to live by.

Amazing economy of strokes and vision of the whole. I am learning that at the midway point that a flower may look nothing like its eventual self. This is so much what we starting out would-be artists need to learn.

That 'draw the essence of things' part sounds as Japanese as it gets.
You are right. If we think about it art is not supposed to be a perfect representation of the world, it should rather convey its essence in a 2d plane
