  • People always ask me how I get my fondant so perfect, clean and sharp. The answer is TYLOSE POWDER! Tylose is my holy grail in cake decorating. However, you need to know how to use it correctly for it to work for you.     I only use store bought fondant when I need a little bit and I’m not going to be using a whole batch or even half a batch. So I buy the small packs of whatever colors I need. The key to store bought fondant is just letting it dry. If I need it faster, I throw it in the dehydrator. I don’t use fondant or even make cakes as often as you do so this is my “hack”. Lol. Too soft fondant is what made me hate fondant. Through your videos, I have come so far.

      This is great advice Brandi! To anyone who still wants to use store bought fondant, allow plenty of time for the pieces to dry. How many days in advance do you make your decorations?

      @@KarolynsKakes three days usually if I need them hard. It’s usually just small pieces of little things that I put in a mold.

      I use store bought too, but tylose speeds up the drying process and allows for neater cuts. I don’t think I could cut out the fine details without it, especially lettering

    I have no problems with store bought fondant, but my process is making things a few days in advance or drying them in a dehydrator if I make them later. I think it may also depend on the brand.

      @@cdv706 I tend to just leave things overnight but it really only takes maybe 3-4 hrs? I never really timed it!

    I never thought I’d like fondant. All I had sampled was tough and chewy…not edible. Your fondant is delicious! It turned out perfect the very first time I made it. I’ve never used store bought fondant and now I never will! Thank you!

    I remember when I first made your Marshmello fondant. I made a complete mess and I didn't get it right. But after you make it over and over you start to feel what works. Now I love making it😅❤

    I love your videos and you’re a big inspiration to me. I follow most of your tips and tricks but I have been needing to be patient when k add tylose powder to my homemade fondant before working with it. I plan on doing 3D images like you one day, thank you and keep up the good job!!

    I've had success with it using "Satin Ice", however, I only used it to make roses. I'm guessing, due to the thinness of the flowers, the fact they are very light weight, and that I formed them several days in advance adds to the success.

      Sounds about right. Satin Ice is very soft!

    Love your Videos Karolyn, when microwaving the Marshmallow fondant I found it cools of and need to use quickly or it's too hard, this is after one zap in micro so is my consistency wrong to start with do you think? You seem to let them sit on the bench in nice balls all colours and use as needed for a long while?

      With the tylose added, it can stiffen up fast. But it shouldn't be too hard to start with. You may be adding too much powdered sugar to the fondant when you're making it. Or maybe scale back on the Tylose a little bit.

      After you let it sit, you can zap it in the microwave for 5-10 seconds if you need to soften it a little.

    Hi, do you happen to know anything that can be used in place of tylose/gum-tex? Every brand I have found has a peanut/tree nut warning and of course I have an allergic kiddo.

    I use store bought and tylose and it always goes hard but takes for ever! I can't find white marshmallow bags on the UK to make my own 😕

      Are you asking when should you make the fondant? I make my fondant on Sunday for the following weekend. So about a week in advance. That way I have the fondant ready to use for covering the cake and making decorations.

    CMC definitely works with store bought fondant and becomes like a rock by the next day..

    I use store bought fondant when making toppers, I ❤ CMC , but honestly its the measurements of how much to use, because you can definitely sprinkle too much and it can dry out your fondant and it’s basically ruined..

      @@KarolynsKakes Yes I do. I use Wilton or Satin Ice, but the price for store bought fondant has become very pricey especially for toppers that are just going to be thrown away😞..

    I always thought tyloose was just to make the fondant hard for decorations,maybe that's why my mmf does come out stretchy, it always breaks when stretched..and you did say Liz Mereks name❤ correctly ❤❤

    I am smoothing my edges, using my tools… I think I’m not letting my fondant sit long enough. I’m still getting a little dragging. But I worry that it will get too firm and then not be able to be formed to a cake without cracking.

      You can dry the decorations on a cake dummy so they won't crack when you put them on. If you're putting it on an 8" cake, dry it on an 8" dummy. Or you can put it in a ziplock bag so it will stay pliable until you're ready to put it on the cake!

    I need to make some wavy “hair” decor for the side of a cake with a face. I need to add it towards the end of decorating to mold it on to the curves of the top and bottom of the cake on the side. Should I add a tiny bit of tylose to the fondant and use the day I need to add it to the cake? I don’t want it too hard so as not to mold around the cake. I have a cake dummy the same size as the cake, should I use that and make in advance? It’s store bought brand … I’ll try your recipe in the future.. I needed dark black this time ..

      I would add the tylose the day I'm going to make the hair and stick it to the cake right away so it can set to the shape of the cake. 😊

    Karolyn, have you ever had the problem of tylose causing small white lumps throughout your fondant (marshmallow)? And no amount of kneading will break them up. I bought some CK CMC powder, and it causes lumps all the time. I am wondering if it is past it's use by date (not one on container). I just looked it up and it does happen, so wondering if you'd experienced it and how you prevent it. 🥮

      Oh no! I've only had it happen when my powdered sugar was clumpy, not when the tylose was added. The tylose is so fine so I don't think that would be the cause. Sometimes I sift the powdered sugar and still get small clumps in there. Do you think that could be the issue? Is the CMC powder clumpy?
