    Any advice as how to do this with categorical data, e.g Var1 & Var 2 = A, Var3 & Var4 =B Var5,Var6 &Var7 = C etc. Thank you vert much.

How can we categorize qualitative data such as country of birth where there is no numeric value?

Well each of your cases/individuals will have a specific country of birth, so your numeric values will be frequency. Country of birth could then be coded as a factor variable (i.whateveryourlabelnameis) since it's not a continuous variable. If you were interested in just a couple country of births or a region, you could dummy code your interest group as 1 and everywhere else as 0.

Think of it this way. This video basically took a continuous (scalar) variable like age and grouped it into a new, more manageable continuous variable (age groups). What you want is to take a categorical (nominal) variable like country of birth (since it's an arbitrary fact, there's no order to it, there's no equidistant difference between one country and another, there's no rational zero) and further categorize it into something more manageable for analysis. Your options are to 1) dummy code (1=Turkey) (0=else) or 2) i.countryofbirth (stata creates values from 1 to however many countries you have in your dataset, so it could go from 1 to 210)
