I really like how Ben and Jamie reacted to the end result. Jamie was low-key very excited that he won and while Ben hoped to win as well - he graciously cheered for Jamie and handed off a glass of champagne to him. Nicely done!

I still think they need to use mystery ingredients. That way we can see what they can come up with on the spot. With them using completely different ingredients and concepts, it makes it hard to choose. That being said, I'd be more inclined to order Ben's dish.
been waiting for video since i woke up this morning, constantly checking my subscription. it's 11pm now here in indonesia and when the notification popped up, i immediately closed my book. and i have final exam tomorrow morning. that's how much control you guys have over my life.
First to Ben's point in the AfterTaste video where he said no one is gonna sit around and eat a bowl of mash on its own: I do that.😂😍 And now to the perfect mash (although I use instant one - we've got a VERY good one where I live, it's actually better than fresh...): Don't use butter and milk, but olive oil and water. Then add salt, plenty of black pepper, some nutmeg and a good amount of finely chopped fresh thyme. It is honestly the best mash ever! I make it like that ever time and - as I already said - just eat it on its own sometimes, because it's THAT good!😍🤤
How to level up a mash: you infuse flavor to the milk and butter before adding to the potatoes. Heat up milk with a clove of garlic and some rosemary and then follow the steps in the video and tadaa! Smooth, creamy and flavorful.
James plating is gorgeous. For the mash, instead of a sieve I like to just use a stick blender. it's a little less work and I've found it makes it super fluffy and uniform!

James had the perfect escapist flavors and a great new twist, and a dish you could share with the friends that you wanted to escape with. Although, you would have to convince me to be willing to share it, first! He should have won the last battle, too, and definitely deserved to win this one. Sorry, Ben, but lobster bisque is an old restaurant staple here in the States, and one usually ordered by old ladies, at that. Nothing very escapist about it. You should have escaped France for this one.
