after watching this show, I might start cooking rice in a wok lol. I love to eat that crunchy layer, always cook rice long to get that bottom but never thought of using the wok to make bigger surface. Learned something new everyday.Thank you!!

The trick is to make a "slurry" using the proper amount of corn starch to water ratio and to add it in just the right amount to create the desired, final consistency, and to add it at the proper time and manner as to avoid the slurry from clumping.

my favourite is the beef fried rice, i would get that if it was at a restaurant, maybe without the peas and carrots. the 2nd i would get is that beef stew with potatoes, hold the carrot. all look very yumm

*I am a Central Asian, so we eat rice not often but I love it in Uzbek Plov/Pilav/Palau, in Japanese sushi rolls, Korean kimbaps and Chinese sweet and sour chicken.* ❤️❤️❤️
In Puerto RIco and the Dominican Republic and most Spanish speaking countries we eat crispy burnt rice which is the bottom part of the rice. In Puerto Rico we call it "Arroz Pegao" and in the Dominican Republic it's called "concón". But man, it's new to see that rice deep fried! Great inspiration, Chef John.
