    after watching this show, I might start cooking rice in a wok lol. I love to eat that crunchy layer, always cook rice long to get that bottom but never thought of using the wok to make bigger surface. Learned something new everyday.Thank you!!

      Yes, iron wok can fried rice with crunchy layer and special fragrance, Chinese called it Wok Hey! I have my own easier golden fried rice recipe too..

      @@Dwayne7 It's used to thicken the liquid in soups, stews, and gravies. The trick is to make a "slurry" using the proper amount of corn starch to water ratio and to add it in just the right amount to create the desired, final consistency, and to add it at the proper time and manner as to avoid the slurry from clumping.

    I'm a start breaking some thumbs. The running water is a very necessary procedure to keep the Chef, behind the cooking station cooler and not die from a heat stroke. And for those who disliked because of the lil burnt rice... 😑Shame on you all! You probably seen more burnt rice in your own home! Live a lil and let live! Chef John!!! You Rock!! 😎

    looks so good.
    my favourite is the beef fried rice, i would get that if it was at a restaurant, maybe without the peas and carrots. the 2nd i would get is that beef stew with potatoes, hold the carrot. all look very yumm

    Perhaps to anyone who says, sewing with these tools is not so difficult. But it is worth having the best tools and not putting Love in what we like to do! Here in Brazil there is a phrase that says "I take my hat off" which means: applaud, praise, praise among other positive meanings, and I say "I take off my hat for Chef Jhon and his entire team"!

    In Puerto RIco and the Dominican Republic and most Spanish speaking countries we eat crispy burnt rice which is the bottom part of the rice. In Puerto Rico we call it "Arroz Pegao" and in the Dominican Republic it's called "concón". But man, it's new to see that rice deep fried! Great inspiration, Chef John.

    My reaction to the thumbnail: "What have you done?!" My reaction to the recipes: "What's happening?!" This was satisfying, will take me a year to make these 5 recipes properly but only if I practice almost every day. Not a complaint, just preparation for a long journey.
