I can't stop gawking at that pink ring near the bark, it is so thick! Visually it is a very appetizing slab, I bet it tastes good too with all that juice. Every slice looked like the next, that is some fine work there!!! I used to go to different BBQ spots with high hopes but I've settled on having to make my own since none of them top that one slice I had way back when. It's a slippery slope and I regret nothing 🤠😎. What would you recommend someone without a pellet smoker to do?
You can do one of two things. 1st still follow my directions in cooking it but instead use a regular bbq pit that has a smoker box on the side. Light your wood up and get it to the temps I specify. You can go as high as 250 after wrapping the brisket but no higher. Same process after that applies. The only difference is that you will have to constantly monitor your smoker to see if it is maintaining its temp. At least every hour, and if you are smoking this at midnight, then you can forget about sleep and say hello to one hour naps🤣. The second option would be is to prep your brisket just like I did. Rub some liquid smoke on for the binder or mix it with the mustard. Wrap it up in butcher paper and foil and bake it at 250 degrees until you get the right tenderness. Stick one of those digital thermometer probes that are attached to a separate monitor so you can see when it hits the right temp without having to keep opening the oven. When you’re lookin’, it aint’ cookin’. Once the probe goes in and out like butta, let it rest for at least an hour and enjoy. Thank you for asking. Great question. Have a blessed day brother 😎✌️

Fat is flavor and has vitamins A, D, E, K2 that don't get destroyed when cooking. Doesn't make sense to trim it.
You are exactly right and definitely do not trim all of it. But some is unnecessary for presentation purposes and hinders smoke penetration. By all means, like I say in my video, you can ask 100 people how to cook a brisket and you will get 100 different answers. This is just my take on it and it has worked wonders for me.
