You are very correct in your assumptions that it’s better to paint a car assembled. I’m a retired painter. I was in the industry for almost 50 years and working for a major paint company. I had the privilege of traveling to judge good guys car shows for best paint, I could pretty much tell you every single car in a show that was painted in pieces as they never match 99% of the time and the car put back together looks like Farmfield from an airplane. I’ve always preferred to do the jams. Tape them nicely. Use the foam in the area of the jam to make a soft blend inside and then paint the entire car together. I think that’s the way to go in my opinion. 👍🤷♂️🤷♂️🤷♂️

For the door panels, and this is just an idea; the El Camino is a B- body, basically a Malibu coupe utility, so you could look at other gm ones, like the Malibu, or tudor Impala or Caprice. They're so closely related to the G-body, one of those might fit. I had suggested a while back, when you were talking about a different dash, a Civic or Integra dash, would a gm door panel play well with that? graft the piece of honda door panel with a gm one, or like you said; custom ones, although pure flat ones might not do the build justice, in my opinion.
That gas tank behind the seat in a 69 Chevy killed my best friend at 16 years old back in 1995. I don't know why anyone ever thought it was a good idea to put it there. If i were to acquire an old truck like that the first order of business would be to put a modern tank or fuel cell under it.
