This is a great video and I'm hopefully going to use it to make trofie pasta today. The divide by 1.82 stumped me for a while. From reverse calculations I worked out that it's a 55% hydration - so multiply the amount of flour by 0.55 to get your amount of water required. Eg. 300 x 0.55 = 165ml 😊

I agree I need more practice and have not yet had the many, many years that your average Nonna (Nonni - plural) has had to put into this wonderful and creative art. Always learning and completely committed to the ethos that there is no right or wrong way - the only real way is to give it a go and have fun!

My videos are designed to help people make pasta in the traditional Italian way and during my many years of living in Italy, I can attest that for some, some of the pasta shapes are difficult to form. therefore, many households have developed their own method of making shapes like trofie.
Thank you for your comment ... pasta is a very creative medium and depending on where you live in Italy will depend on how you prefer to form and create pasta. They even have different names for the same style of pasta. I would like for people to be able to enjoy the creative process without being hindered by too many 'should be made this way, not that way'. It gets in the way of creativity :)

By using the dough cutter this would not be hand made !
