I think kiling the lothric knight at the first bonfire of lothric castle may be faster. With the mimic hat, silver ring and shield of want he drops 4950 souls and the bonfire is seconds away. With my faith build I can kill him with 1 lightning stake, he can drop chunks and sun bro medals too. I'd say it takes me 15 to 20 seconds to kill him and get back to the bonfire so roughly 15000 souls per min and titanite chunk drops too.
This is probably my favorite place to farm souls. You can go with the silver serpent ring and the mimic helmet (and if you have the mendicant's staff you can kill them, then quickly switch to it for more souls). I think with these items you get around 4 thousand per enemy. You can easily get over a million souls in less than an hour. Theyre also easy to kill one by one and you can kill them easily with a good wepon (I prefer using the black knight's glaive)
