    Dude, I'm an entertainer for decades, and THIS is entertaining. The story of brewing in the cold night is exceptional. "The experience of the beer goes far beyond the glass." Awesome. Thanks so much for pushing the extra 20 for the quality, both in the beer and in the production.

    My favourite of all BTV videos - you wouldn't believe how often I've watched it. Science, poetry, history and sheer entertainment - it has it all. I'm an outdoor brewer in the North West of England, but we rarely experience winter temperatures below -5 'C. Can I still justify having a hot scotchie?

    Like I told Dono a short while ago. I have learned a lot from the Minnesota brewers. Thanks for all the brewing knowledge. This vid I totally enjoy ( I have watched it several times) . I like it mostly for the brew day experience. Brew days with friends are special.... Cheers!

    I had never heard of a "hot scotchey" until a brewer buddy of mind stopped me mid-brew to do it. I used a Rye and it worked fantastically. One of the best things I have made. Great Pro Tip.

    Thanks for sharing - always cool to watch people brew and apply various techniques. I brew in the winter in my garage as well. I brewed yesterday and it was over 100, but, it didn't take so long to heat my water, wort, etc.

    In retrospect this is my favorite brewingTV episode, from the parti-gyle split batch to the 4th generation yeast propagation this is what real homebrewers strive for every brew session. Most likely because it's a way to spend all day brewing :)

    We definitely grow hops in Minnesota! This year was sort of rough due to extremely hot and dry conditions. But we still got 'em!

    I agree with you on the experience of brewing. my buddy and I brewed my annual batch of christmas ale about a month ago and it was the hottest day of the year here in Indiana. When we crack them open in mid december I'm sure we will commiserate/reflect on how hot it was that day.

    Quick note on pronunciation: the 'w' in the middle of Warwick and Chiswick is silent. I know I'm being pedantic but as an Englishman it jars ever so slightly. Love the content though. A fantastic resource and full of information.

    I've read it's actually good for the hops to freeze during the winter. I am too far south to grow hops. The constant heat exhausts the plants.

    The brew that had the honey in it turned out really well and the bulk of it is being bottle conditioned. If just dropping it in after first croizen works then sure. I added my honey to 1 litre of water and heated to 80 Deg C for 20 minutes, then when it cooled it went into the fermenter with the wort at the beginning of the process.

    oxygen during the re animation and reproduction phase is critical for sterol production, which helps in cell wall fluidity, and therefore downstream resistance to higher alcohol levels. It;s pretty important

    When I drink a 'Scotchie' I set aside the first wort for the Scotchie and save it for after the brew day is done. It's a great reward at the end of a long, cold brewday. It also has the added benefit of settling out the liquid so your Scotchie is nice and clean. After the brew and cleanup is all done, gently reheat your Scotchie in the microwave and when it's hot add your Scotch. I choose the Scotch based on the grain bill, for example, a nice smoky Islay Scotch to go with a Scottish ale. Or a Highland malt like Macallan to go with wort from a Strong Golden ale. In any case, it's a delicious reward that only brewers get on brew day.

    eGad. I see that snow piled high @ 19:38 and the cold weather wear and I remember why I moved south. I do miss the intelligence and humor of the average guy north of the Mason Dixon line, but I'll just have to watch youTube because I sure the "F" ain't moving 'back. Interesting technique, but I also doubt I'll be trying any barley wine soon, I can't even drink most imperial stouts. Anything that strong and I'd rather have bourbon. Thanks for the laughs...

    Cool video, ok, top 10 mid-level all grain vid on youtube- however since it's youtube gotta point out-explaining/describing the Oxygen infusion rates in a stir plate as a trickle shows a lack of scale, a stir plate constitutes a complete infusion of every available molecule, more tsunami than trickle. Your still cool as rocky mountain water in general!

    I am about to do my first big beer. You show a barley wine from a bottle that is well (maybe over) carbonated. I've heard bottle conditioning is difficult in high ABV beers due to stressed yeast. Did you force carb in a keg then go to bottle?

    how long do you let the starter flask boil? i thought you have to do it for 5-10 minutes to sanitize, but it looks like you just did it right after the boil over.

    if microbiology taught me anything its that yeast can be aerobic or anaerobic so trying to oxygenate the yeast starter is a waste of time, it doesn't need it.

    It’s -30 out tonight. I told my wife “I’m gonna go outside and brew tonight.” She said “No you’re not, I’m not gonna push your frozen corpse out of the way so I can get to work tomorrow.” I said “Yeah, I’m not. I just wanted to see what you would say to something like that.” For me, it has to be over 25 to get me to brew outside.
