I'm sure that XO sauce lifts this already pricey dish to an even higher level (scallops certainly aren't cheap in the UK), but oh heavens a good quality brand of XO sauce is way beyond my budget. I'm presuming that cheap brands will do nothing for the dish, so are not worth buying.
