You hold down shift, but if you press T, your status bar will appear. If you exhaustion is high, sit down in a chair. If your sleep meter is low, drink a lot of coffee. 👍

How can you join fire department 2 because for me it doesn't let me join it

You may need to rejoin the game and head to the departments tab. There is 1 bug that prevents joining, but a rejoin of the game fixes it.

how do i accept the call on the pager and how do i turn it off? also how do i exit the vehicle?

When a call event gets started, your pager will emit a beeping sound with an option to deny and accept the call. The pager currently can't be turned off, just the radio.
To exit a vehicle, press space.

You can get station 2 easily, from the team tab, that is.

Most likely, it is a loading issue that has been in the game for a while. Rejoin the game and wait a while before clicking on the teams tab to avoid the back button breaking. Having a little black in the button indicates its functional. All white goes against it / not loaded.

how do you cook food?

Mainly, you need to get ingredients from the only store in the game currently, or just check the nearby freezer for any. After that you can click on the oven, (that is after slicing the ingredients on the chopping board) then cooking the food.
{I dont use the hunger system due to its time expense to keep up}

If you mean how to close the stabilizers, simply reset the ladder to its original position, then press the back arrow button on each side, which retracts it.
