Here's how you can prepare Chicken Pakoda, a delicious and popular snack from South India, including Rayalaseema:
Ingredients:
Chicken: 500 grams (boneless, cut into small pieces)
Besan (gram flour): 1/2 cup
Rice flour: 2 tbsp (for extra crispiness)
Corn flour: 2 tbsp (optional, for extra crunch)
Red chili powder: 1-2 tsp (adjust to your spice preference)
Turmeric powder: 1/2 tsp
Ginger-garlic paste: 1 tbsp
Garam masala: 1 tsp
Cumin powder: 1/2 tsp
Coriander powder: 1/2 tsp
Green chilies: 2-3 (finely chopped)
Curry leaves: A handful (finely chopped)
Fresh coriander leaves: 2 tbsp (chopped)
Egg: 1 (optional, for binding and texture)
Lemon juice: 1 tbsp
Salt: To taste
Oil: For deep frying
Instructions:
Marinate the chicken:
In a mixing bowl, add the chicken pieces, ginger-garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, salt, green chilies, curry leaves, coriander leaves, and lemon juice.
Mix everything well and let it marinate for 30 minutes to 1 hour for better flavor absorption.
Prepare the batter:
After marination, add the besan, rice flour, and corn flour (if using) to the chicken mixture. If using an egg, crack it into the mix.
Add a little water if necessary to coat the chicken pieces well but make sure the batter is thick enough to stick to the chicken.
Frying:
Heat oil in a deep pan or kadai over medium heat.
Once the oil is hot, drop the chicken pieces gently into the oil in small batches. Fry them on medium heat until they turn golden brown and crispy.
Remove the pakodas using a slotted spoon and drain excess oil on paper towels.
Serving:
Serve the chicken pakoda hot with lemon wedges, sliced onions, and mint chutney or ketchup.
