  • Probably the biggest name in the local Hokkien Mee scene and one of the proper OGs, Nam Sing is in every piece of media that mentions the hokkien mee dish.
    But, there's no lard and sambal belachan.
    2 components that I thought were integral to the success of a plate of hokkien mee.
    It is still delicious nonetheless, but hm, maybe authenticity is over-rated.

    The swee guan episode about to go CRAZY (btw take note they’re only open 6-10pm and closed on Wednesdays + cash only which is a downside but the hokkien mee is the king of kings)

      Swee guan really is the king. The uncle’s polo tee pocket filled with so much cash until it always look like it’s drooping.

    Nan Sing or Six Mile Stone Hokkien Mee as it was called in the 70s. Yes the chopped chili was the original serving until someone added those sambal or belacan, think it began in the 80s. It actually disappointed me when that happened.

    Nice point about the chilli, natural flavor is good, but a well balanced belacan doesnt take much away from the dish
    last year, when i tried nam sing, i noticed that the number of liaos abit less even at medium portion, like 1.5 prawns for small and 2.5 for medium. The noodles are decent though but wish they had slightly more liao

    I grew up in Toa Payoh. Come Daily/ Tian Tian Lai is my favourite. And till now I eat it with Cut Chilli Padi

    You should try the other one in the center row of stores... much better than Yu Ji but less popular

    I tried namsing a while back, it is as bad as the one at ABC brickworks. I rly love my Hokkien mee but these two are bottom tiers to me

    Spot on for yi ji fried hokkien prawn mee... Chilli is just way too spicy and cover up all flavours. Broth wise really taste so much like those canned abalone liquid, slightly on the sweet side. To me its like a mock hokkien fried mee... You are great on your reviews!

    I am very particular about fried prawn noodle. I remember when I was young Back 40 years ago there is this uncle at upper changi road coffee shop fried one of the best hokkien noodle . His business was so good till he make a fortune wearing Rolex watch and having his 4 story high Bungalow house. 40 years later he started changing one of the ingredients and way of cooking like using thicker bee boon instead of small bee hoon which suppose to absorb the soup better which make the food taste better and also he used to fried it dry instead it a little more wet now which losing some of that x factor. I was disappointed. I am still looking for that old school kind of flavor.

      is this the legendary rolex hokkien mee? I think their brand name is Kim Keat right, his son or something also doing on his own. I'll have an award at the end of the series for the most old school authentic tasting plate.

    Hokkien mee was served with lime and cut chili in the 1960s. That's the original and samba comes about later. I prefer lime and cut chili.

      yeah I don't really use them for this series. it makes it better for sure but it makes it harder to decipher the taste.
