    Hi John. I'm in Spain and we also celebrate Christmas Eve here. I did a roast turkey with Brussels sprouts and roast potatoes and I thing that, for the first time, everything was perfect. It was just like I remember my mam making when we were kids. Thanks so much for this - it really made Christmas dinner special this year.

    Great job. Looks fantastic.
    I do mine very similarly except when doing the gravy I put the tray on the hob and mash up the veggies. Then add some mustard powder, red currant jelly and white wine and stock. And eventually put it through a sieve before thickening.

    This is as simple as it gets when coming to roasting a turkey, and with great results! I’ve got two 5kg turkeys this year, as we’ll be having two dinners, but also to make sure there are plenty of leftovers!
    However, I love poultry and will roast fowl several times a year. I encourage others to do the same. Seasons Greetings!

    I couldn’t make gravy from the turkey 🦃drippings.
    I like to refrigerate it overnight and on .
    Boxing Day morning spread it on warm toast with salt 🧂.
    Love it 😊.

    John, Just to let you know I Have tried your recipes over Christmas, Honey and Mustard Roast Ham, Roast Turkey, Turkey Stuffing, and your Brussels Sprouts with Bacon. All were first attempts and I didn't have a single failure. Well Done to your Christmas Menu. Tomorrow, we have a family friend coming for lunch and her favourite is Shepherd's Pie!! So guess whats on the menu for lunch tomorrow - Cottage Pie and Home made Apple Pie and Custard . Thanks once again for all your help. Jim

    Mr. John your turkey looks amazing! I love your videos, all of them. I also like how you explain as you go step by step. I’m going to use this recipe to make Cornish hens I have in my freezer. Made one of your bread recipes this past week and my husband said it was delicious. When he takes a bite and he closes his eyes, I know I hit a home run! God bless

    Turkey is outstanding fair anytime of the year. Our local wild turkeys, that has fatten on white and red oak acorns and beachnuts, have a taste that can not be duplicated in farm raised birds. There is a large gang of them that prowls the property and hopefully I can harvest a mature gobbler this spring, during the season. Also the iridescence of their plumage is a beauty to behold.

    In all my years, I never considered/saw using veggies to keep the bird off the bottom, then serving those veggies. Thanksgiving/Christmas will be better this year.

    Adding a little balsamic vinegar or soy sauce to the gravy sounds like a good idea, the added acidity will give it a lift. In Norway we also like to add some junipher berries and some lingonberry jam to the gravy.

    Merry Christmas to you and your family. I enjoy both watching (and eating) your recipes. I have asked for a digital scale for Christmas. I have had trouble sometimes converting weights to volume measures and one recipe (hot cross buns) failed because of it. Thanks for a year of good recipes and techniques!

    Superb! getting tired of saying well done! ha ha ha - couple of things: We made the stuffing, but my stepson has to have gluten free, so we swapped the sage and onion stuffing mix because of the breadcrumbs and used chopped sage and onion powder - and it was still superb. Thanks for the original recipe John
    Secondly - I have a question if you can help John? We've brought our Turkey crown yesterday and it was frozen (5kg) We have put it in the fridge to defrost as you said. Would you know if it was okay to leave IN the fridge up to Christmas day even after it has defrosted? Or would we have to cook the crown as soon as it is defrosted? (hope this makes sense). My girlfriend is kind of paranoid about making sure the bird is still fresh enough to eat, I thought it would be, but thought I'd ask an expert like yourself. Any comments would be greatly appreciated. Thank you

      If it's vacuum packed it' should be ok, if not I'm not sure to be honest mate, sorry that's not much help, can't help wondering why you defrosted it so early . 😃👍😉

      @@JohnKirkwoodProFoodHomemade Crisis averted! contacted the butcher I got it from, It WAS vacuum packed and has a use by date of 3rd January, so as long as I leave it in the fridge it will be fine. At least I'm out of the dog house with my girlfriend! But Thanks for your advice John

    Always on top ! Could you show us how to slice/ cut the turkey or a chicken ? Everytime I do that with my butcher knive I made a Real massacre .. just curious to know your way !

    I shouldn’t watch this while im on a meal break at work , it made me hungry . Couple of questions John , butter under the breast , do you think it makes a difference? and putting the neck etc in a separate tray with stock below to add steam and start gravy ? Whats your thoughts ? Cheers . Like you always emphasise safety as well

Butter under the skin? the best way to find out is to try it, using an injection system, my idea of what is good my be entirely different to what you think of it. Not sure what you mean with the neck, just cook it with the turkey and make the gravy with the stock.

    Hi John ty so much for the Xmas playlist can I just say we are cooking a turkey crown but we find the turkey crown is always too dry can u advise me on how I can cook a moist turkey crown ty so much hope you and the family are all well xxxx

      Hi Varna, when we would cook turkey crowns for our customers Christmas meals, we would split the crown into two, take out all the gristle then wrap each turkey breast very tightly in kitchen foil. Place both in a deep baking tray then fill the tray half full of water. Cover the tin in more foil then bake in the oven at 180 C. Here is a great link for cooking times for the size of the crown. You wont get the roasted look on the turkey but it will be wonderfully moist and all the water you put in turns into a wonderful stock. www.bbcgoodfood.com/howto/guide/how-to-cook-turkey-crown

However turkey is not traditional christmas food for my family we decided to buy and cook but I would like to ask if there is a big difference between fresh and frozen turkey?     Hi John, I saw the picture of your roast turkey yesterday.. mine is in the oven today, thank you. I would like to know the make of your oven gloves, you seem to be able to handle hot pans for longer than I can with my padded mitts. As a long time home bread maker I've more small burn marks than I care to add to. Would you share to name of the manufacturer? Thank you for the great videos and instruction. Cheers.

      Thanks again for watching J Gentry, Yeah they're called Skeleton oven gloves, they were bought for me as a present from Amazon I believe, I'm sure if you enter the name in their search field they'll pop up somewhere on their site, I get a good 10 seconds with the hottest temperatures that I use, before I start to feel the heat coming through, which is not bad. Good luck with the Turkey my friend.

      Roasting a medium size buttered chicken the same way as the turkey, is usually 90 minutes, cover with foil for the first 60 and remove it for the last 30. at 190°C. you can use the vegetables and herbs in the same way as the turkey.

      Boneless turkey crown, temp 190°C, 25 mins per kg plus an extra 30 mins, cover it with foil, skin side up, remove the foil for the last 30 minutes. Thanks Susan.

    Dear Chef John. Before you Cooked your Turkey did you, or do you wash Chicken/Turkey before cooking?

      It is recommended that you do not wash poultry before cooking, as it can unnecessarily spread bacteria around your kitchen, but I must admit, I do sometimes rinse before preparing . Thanks for watching, much appreciated Louis.

    Can I use other spices and herbs to spice up the turkey, my fiancee was hard stubborn on having the turkey plain just because "that's how people eat xmas turkey, plain, you can use spices and herbs some other day with another turkey"
    I would love to know what's this rule of having it plain in the UK? And is there english people and chefs that use spices to make their xmas turkey tastier?

      @glyn hodges thanks glyn for your lovely answer, you gave me a much wanted explanation than my fiancee's mysterious answer "there's no explanation, it's just how you eat Christmas turkey".
      Didn't imagine that people back in the 50-60s were used to the simple but authentic plain taste of foods because spices were not common, it's very interesting imagining your reaction everytime you tried a new spice or condiment as an adult 😊

      Whenever I'm finished using the dutch oven, I always give it a very thin coat of vegetable oil (inside and out), this keeps the iron protected from rust, and keeping it in the oven keeps it seasoned or non stick.
