Omg, the crêpe like food that a chef was making looked so good. I don’t know what it is, what are the ingredients, what are the condiments for but it must be delicious!!! It seemed vegan, is it?
Its called dosa, the variety the chef prepared is called masala dosa, where masala stands for spice and dosa is the crepe. It's savoury, made of a rice and blackgram batter. It's extremely healthy, and yes, it is vegan. The masala consists of podi (podi is a specific south indian spice mix), chutney (this is a sauce made of different local ingredients and can vary from place to place) and the yellow thing is a quick sauteed mix of potatoes, onions, and a few more basic spices like whole mustard. Its best enjoyed with a lentil curry called sambhar. The taste profile of dosa itself is savoury but it is a bread of some kind, can be paired with many things, it's versatile. But this method of making it is locally preferred and rightly so, it tastes amazing and when rightly prepared, has many health benefits.❤️ Hope this helps :)
Why is the cook touching the food with his bare hands? Watch him prepare the dosa when he crushes some condiments in his fist. There is no reason on earch cooks need to touch like that. This is post-COVID world, and I hope Indian restaurants get the message.

I have stayed at some Taj properties in India, as well as other brands. These uber unlimited breakfasts and lunches are 1. Expensive, 2. Unhealthy and 3. Not appropriate for someone on a business visit who wants to get a quick bite and head out.
