Vegetarian by definition is : " a person who does not eat meat, and sometimes other animal products, especially for moral, religious, or health reasons." I suppose we could discuss the definition of "meat", but I really do not see how that differs from the fat of an animal, really. You have your lacto, ovo. pesa varieties of vegetarianism, but I feel fairly certain that fat and flesh are fairly inseparable when it comes to defining what is vegetarian.
Also, I am a serious mycophile, and do not make mistakes when it comes to mushrooms. I have been foraging wild mushrooms for many decades now, and love the chicken of the woods. This year has been so very dry, I have only found one very small chicken in the woods. Thank you, though, and I hope you do not have to wait for videos to load like that often.
First time cooking our own foraged Chicken of the Woods and what a great recipe to enjoy them in. I didn't have a few ingredients so I adjusted just a little with what I had (no zucchini in the fridge, cooking sherry for white wine, hemp milk for cream) Tasty..Loved it. Thanks for the recipe.

@@brioncurren6499 Vegetarians eat what doesn't result from the death of an animal (honey, butter, eggs). Goose fat clearly comes from the fat of a dead goose...unless it had liposuction!! LOL
Chicken of the woods is ok but in my opinion giant polypore is far superior as a chicken substitute, not so appealing to look at with its black staining but it’s texture and taste is much better.
It's not vegetarian because of the goose fat, and animals are killed and exploited for goose fat and dairy, so even if it was vegetarian it's pointless in a moral sense. btw, I'm making some chicken of the woods tonight and putting it in a szechuan stir fry which will be suitable for vegans.

Nice presentation! I subbed the goose fat with olive oil, shallots instead of leeks and used fresh parsley instead of basil. Great dish!

Stuart Ashington omd it's not it comes from an animal. When something was previously alive it can't be vegetarian (plant bases)

Yes is was. He said 'courgette'. It's the English word for zucchini. Just like aubergine is the English word for eggplant.
