Workflow question here: Have you figured out a way for HubSpot to trigger when the Docusign is actually "Complete" (meaning all signatures completed) to then send the deal to another stage in the pipeline?
Yes, you can use some custom fields to connect to the data in HubSpot. It was briefly touched on if you skip to the "Customizing" section. When you are mapping out the fields, you can use custom fields to support the document.

Can you use the "autoplace" tool for the fields that need to be filled by the customer?

This is not currently supported by the integration, but you could use a 3rd party tool like Zapier to perform that automation!
