  • Mexican Technique to Curing Your Mortar and Pestle. Recently we were in Mexico and found this amazing Mortar and Pestle. I use a Mortar and Pestle for just about all my dishes in the kitchen. The Mexican woman that we bought it from taught us how to cure the Mortar and Pestle using rice and oil. Enjoy!!

    As children, we were given one to play with outside in the yard. After about a year, it was taken from us and used in the kitchen. We were given another one to play with. The last one we had as kids, is still used today in my grandmas kitchen by us "kids"!

    The Hohokam (Native American tribe) hit 2 rocks together to crush corn. They eventually formed a whole from so much use that made the base rock look like a car seat!

    I have one of these in my kitchen. It's called a molcajete. Mine must be over a hundred years old. It belonged to my grandmother. It works great. :-D

      That's what they traditionally call it in Mexico. It is called a pestle and mortar in the English speaking world, understand?

      You technically dont have to cure it. It's more of an option.

      This is better suited for making fresh salsas and guacamole or similar whereas with a more standard granite mortar and pestle you wouldn't do the oil heating part. Granite is a harder and less porous stone, so it's better suited to grinding and powdering. It should be broken in as well though to make nice and even grinding and crushing surfaces that are well mated between the mortar and pestle, and also of course so you don't get granite dust in your food.

    I love your new haircut... I'm tempted to do that every day between Jun and September :) I have been meaning to buy one of those guys... It looks super handy. I'll favor this video as I had no idea I had to cure/season it first. Thank you for sharing Jake!

    One question. Why did you leave the rice inside the pockets and put oil on top of that?
    Isn't rice only used to remove the loose rock?
    Then you clean it out and rinse and then you coat it with grease?
    Then grease or oil is wiped or brushed on filling in all the holes. Crisco works well for that instead of spray on oil or vegetable oil. This would fill in and seal all the holes. The oil is a baked on layer creating a seal.
    Also, why wouldn't you put oil on the inside and outside both so it is cured on the entire mortar?

    The moral and pestle predates human civilization as we know it, and yet it is still a great and useful food preparation tool to this day.

    Kind of like seasoning cast iron. Oil part of it. Flax seed oil is best for cast iron seasoning.I would suggest maybe even 2 or 3 coats if u really want smooth surface in that mortar.

    So what is happening when you cover it with oil and bake it is the fat is polymerized to form a sealing layer. This is the same process used to season cast iron.

      I did'nt know cast iron had to be cured. No wonder my eggs got stuck to the pan like glue and it taste horrible 🤢

    I'm VERY skeptical - you need to buy a better mortar and pestle - maybe that would be good for some kind of meal or grain - but not that small of course - a giant grinding stone. That's like painful anyway. I need an electric version.

    I'm more likely to go carnivore, but the important thing is ripe vegetables have more lecithins.... avoid ripe fruit and vegetables especially organic ones!!

      The molcajete-molcaxitl in Nahuatl-is much older than that. Mesoamerican cultures used them in various ways for several thousands of years before colonization began.

      Lol a year after you asked this question you’re getting an answer! How I’ve seen new molcajetes handled, the rice is only to clean it. You grind rice in it and rinse it and continue until the rice stays white because it’s cleaned out all the crevices of the mortar. So before rice, anything really could have been used to clean it! I think dried corn is something people use and somewhere online I think I saw people who used salt?
      But yeah it was probably corn :-)
