That looks great! I love pasta and kale. It's my go-to lazy meal. I like to add some crushed red pepper and when I am craving something really rich, I will add ricotta and chopped roasted chestnuts. Also, I grew up calling zucchini cucuzza because that was what my grandparents used because they could not get cucuzza in the US. We just sauté it in olive oil with onions and then simmer briefly in crushed tomatoes. If you have leftovers, you can scrabble eggs in it and have it with toast for breakfast. The simplest food is always the best.

My family actually grows the long Italian cucuzzas in the summer here in NJ I make it the same way or in a soup lol with the tenerumi leaves. Simple food is definitely the best.
Yes, I like no processor/ blender recipes the best. Exponentially increases my chance of making it tonight at 6:30. Like your suggestion of boiling the garlic and stripping the kale.

I'm in the middle of making the Ravazzate. The ragu is in the fridge, I'll make the dough tomorrow. But I will try this recipe with kale first on the weekend and then spinach later. I feed my lizards kale so I'm always buying it. By the way.. the ragu for the Ravazzate, is delicious on its own......
