Italian sausage has to have herbs or spices, otherwise it’s just ground pork. The most common flavorings are fennel, pepper, sugar, onion, garlic and parsley. It looks delicious though!

Pasata?
Passata is just a glass jar of tomato sauce 🍅
It's strained pureed tomatoes, so no seasonings or pulp as would be in tomato sauce.

I have been eying the whole Octopus at Whole Foods in Omaha but I am afraid to tackle it. What is with the dipping the Octopus three times ? I have seen my Dad turn around three times , place his hands over the pot and pray it comes out tender. Is that the same, G.?Seriously, I have seen videos of the old Guidos slamming the fish against the pavement. I have seen Nonnas swearing that boiling with cork works. How long cook? Do you use just the tentacles?
Haha who know if it’s true I think it’s more for aesthetics on the tentacles. I’ve watched people slap them on the rocks at the beach too lol the octopus at Whole Foods is either frozen or previously frozen and thawed. That is actually good freezing the octopus helps it come tender. Just cook it on very low 20-30 mins and let it cool off in its water. Season it the way I did with some good olive oil 🫒🥖👌
Ah, raisins are the North African influence on Sicilian cooking. The reader who complained should try it. Are potatoes usual with this Sicilian dish? I have seen Couscous used especially in Western Sicilian recipes( closer to North Africa). Where did you get your Ginger hair highlights? Mom is an O’Malley from South End Boston or on your paternal side you have Red headed Sicilians?
You are right western Sicilian recipes use a lot of couscous. I had this dish In Taormina and I chatted up the chef/owner on how to make it lol my family is all light skin Sicilian from Agrigento 🇮🇹
Too many potatoes for , what two servings? Like your recipe with use of cherry tomatoes which are sweet all year round. I know it is fish with crazy water , but I like to add white wine to at least the vegetables and burn alcohol off. I will sometimes threw in some clams or mussels , assuming you have room with less potatoes in pan. Finally, the garlic lovers should forgive you as you used shallots. Thanks , for the recipe.

Raisins?!? 🤮 The rest seems ok, but although I love olives I don’t want them with my fish and potatoes, so I’d leave them out too and maybe just use a few more capers.
It looks fantastic, but I’ve never understood why the clams aren’t removed from their shells before serving. The shells are just a pain in the ass, and make an unnecessary mess. Not only do you need an extra bowl for the shells, but you also have to stick your hands in the pasta to get the clams out of their shells too. I’m not blaming you for serving them that way, I’m just asking why they’re typically served like that.
Put that sammich on a panini press and it will get better! A couple slices of mortadella or prosciutto would be nice too!
