  • This sauce has many diverse uses. It's great with a variety of fish and vegetable preparations when used as a primary sauce. You can also use it as a secondary flavoring tool for certain kinds of stews, eggs, pasta etc.

    Chef John thank you for these videos. I’ve learned so much from your explanations of technique and watching you cook. I think I’ve watched your brown sauce videos a dozen times because it’s the epitome of awesomeness watching you work in a commercial kitchen..

      Go to "www.Raven.directory" and click on the upper left categories tab. Select "Stocks & Sauces" and scroll through the pic/icons and you will find it. Once your Champagne sauce opens up on the screen you will have 2 ways of viewing the written recipe. #1 Click on the button below the large video image that says; "recipe print view" . #2 You can click on the individual tabs on the main Champagne sauce page that contain different parts of the written recipe. BTW - This Raven site is NOT CONTOURED for phones and tablets yet. Only desktops & laptops. Have fun!

      Here's the recipe link - sorry, but that video is 20 years old, back when we were putting these on DVD's, which was where the index was. Times change.
