    Here's an advice to take this to the next level. All the spices besides the mustard seeds and cumin seeds go in the oil with the onions after the onions have become translucent. You need to let the turmeric, coriander, etc cook in the oil. If you don't, it leave behind a bitter sort of flavour which is very off-putting. Also when you add the water and tomato, add a little bit more water and let the dish simmer for 5-10 mins before adding the eggplant. After adding the eggplant, let that simmer for maybe 2-5 mins more.

    美味しそう‼️。時々、なぜか、やはり夏が多いのですがインドやスリランカのカレーを作ります。オイルの中にクミンシードやマスタードシードを入れた際のテンパリングの音、大好きなんですよね😋。インド人の知人からナスのカレーを教わった時、テンパリングの際にポピーシードを入れていて、私には初の味でしたがとても美味しかったです😃。久しぶりに作ってみたくなりました😉。

      @@susosu6070 yes, it is different, but the spices used are Indian and common in SE Asia as well. Preparation is a little different

    Out of pure curiosity, what's the point about deep frying the aubergine first? It doesn't absorb a lot of oil that way? Honestly, really curious about it.

      Due to frying it becomes lil softer from inside and lil crispy from outside and tastes pretty good.
