    My thoughts getting a lighter crown, is due to the collection of excess of butter at the bottom but the colour combination has a nice finish ❤happy baking love what you do

    I made caneles using your recipe and technique. It’s my first attempt and I m over the moon! Yielded beautiful results using carbon steel mold although with some white butt probably due to oven issue. The interior is soft custard like and crunchy on the outside! Thank you for sharing your knowledge and skill! 😘😘😘🌻🌻🌻 next will look @ your Kouign Amann recipe 😬

    Wow I LOVE your detailed attention to everything and the options you mention. It's crazy when you compared the ones from the individual molds vs the pan...the deep brown color looked PERFECT compared to the black brown on the others lol what an awesome video!!!

    May I ask the difference between using whole egg with only egg yolks?
    Do you ever get canelé with puffing bottom and can’t sink back in?

      I turn on the translate function from my laptop and can translate most of them except if it is not in a document format.
      You can register yourself with this globalexpress.rakuten.co and will send overseas. But joining needs to provide photo and address ID and signiture ID as well. First shipment address has to be the same with the joining address ID but can change after 1st shipment completed.
      Shipping is quite expensive too! But they offer from time to time 30% off - can have choice to ship AIR (5 to 10 days) or Surface (by sea mail takes 2 to 3 months)
      I advise you to first try to make sure you are able to register with this Rakuten Global express first before you order. You will be given a Japanese address to ship to and then forward the parcel to you after confirm with your choice to ship. You can also order from some other Japan website, also can combine a few order within a month and group them to ship to you.

      you can :) but just adjust the timing accordingly to the colour. it won't be as evenly baked but it will work :)

    nononono not between 38 and 48. the 38 is a four pack. those mauviel is 48 for ONE SINGLE MOLD.
